Cake Mixes from Scratch and Variations
I'll NEVER buy another cake mix,EVER. This was so moist and wonderful. I did use margarine instead of shortning as I don't buy it. BUT the margarine worked great. I used this to make 2 9' poke cakes, using sugar free jello. The family fell in love with it. No cake has ever went faster in this house! For those of you who thought it was dense try this: Cream margarine and sugar together first until VERY creamy, then beat in each egg(I used 3) individually, beating well. Then add vanilla, baking powder and salt. Add the milk and flour in thre installments beating well between each. This is how my Grandma swore to ALWAYS make a cake, so I listen because NO one cooks like Grandma did...

Easy Smoked Salmon
This was okay but then again I just realized I forgot the brown sugar...So I will be making it again to see if I like it better when it's made right. LOL

Creamy Rice Pudding
While suffering with the worst throat/ear infection of my adult life and looking for easy to swallow foods, I stumbled upon this! It is fabulous! I was out of vanilla so I used a bit of almond extract and cinnamon. It turned out beautifully so soothing to my throat and so filling to my tummy! I loved the fact that it's not overly sweet. This will become a favorite breakfast food, it's too good to keep only for dessert.
