I love everything about cooking (except the cleaning, of course!) Cooking delicious food has been ingrained in me since childhood. From big Italian family reunions every year to hosting holidays at my childhood home, I have so many great memories that involve great food & family.
My favorite things to cook
Chicken scallopini, chicken curry casserole, meatloaf, mashed potatoes, salads, Ethnic cuisine, cannelloni, grilled vegetables, maple glazed salmon, grilled chicken, smoked meats.
My favorite family cooking traditions
-When I was a kid I used to make dinner & dessert for my parents every night because I wanted to try new things. -Making edible gifts for Christmas. -Baking apple pies from scratch with my mom. -Drinking homemade sangria for family get togethers.
My cooking triumphs
-My sweet basil pesto is a hit every time. -Spiced pears with simple syrup I jarred with my mom. -Veggie quiches with carmelized onion. - Grilled BBQ chicken pizza - Chocolate dipped tuxedo strawberries.
My cooking tragedies
-The time I put a pot of beans in the slow-cooker all day without adding enough water & they boiled dry & smelled horrible!

Caramel Sauce
This turns out amazing! Make sure to use Eagle Brand sweetened condensed milk for a smooth & thick consistency. When I used Carnation Brand, the texture was a little grany, like half melted sugar. Also, I boiled an extra hour (total of 4 hours) to make sure it was really thick & camelized. I use this on apple slices, poured over a hot apple pie, or over icecream. Also makes a great addition to gift baskets.

Lentil Soup
What a great dish! I added more carrots, garlic, & celery to mine. We like meat so I also browned some spicy Italian sausage with the onion & garlic. I topped ours with parmesan & served with some sourdough bread. It was the best cold weather dinner.

Creamed Spinach
I made this dish to accompany a prime rib I made for my family. I did make one change to my version. Less nutmeg for us...its so overpowering. Besides that, it was a lovely side dish.
