To Die For Blueberry Muffins
Considering the rating and reviews I had very high expectations for these muffins. I have been baking for 30 years with excellent results and this is the first time muffins were so crumbly they couldn't be removed from the pan. The only substitutions I made was using canola oil instead of vegetable oil (which I have done before) and used a 50/50 butter blend for the topping. I made 7 oversized muffins which took 30 minutes to bake. They turned out flat and fell apart when trying to remove from the pan. I rated this recipe a 1 because I'll take partial blame for substituting the butter blend for the topping which turned our more like a paste than a crumb topping possibly due to the water content.
