Whole Wheat Banana Nut Bread
I will rate anything healthy my 15 yr.old son likes 5 stars! Just finished eating one (Made as muffins)and they are delish! I did make some alterations: 4 bananas 1/2 C. applesauce (no oil) 1/4 C. honey, 1/4 C.brown sugar. 3/4 tsp. cinnamon 1/4 tsp. nutmeg. 1 C walnuts. (will add more next time) I'm going to try blueberries next time.

Guacamole
I took this to a small dinner party untested. It was a big hit and was eaten up quickly! I think the garlic makes this recipe. I added cumin, and some homegrown jalepenos. I also added 1/2 c.salsa instead of the tomatoes.

Hot and Sour Chinese Eggplant
Great! I picked 3 Japanese eggplant and 2 jalepenos from our garden and went to town on this recipe! I would suggest doubling the sauce. (Not the sugar.) I used brown sugar because I like that with soy sauce. I did saute 1/4 of an onion with the jalepeno. This was really delicious. My husband loved it. I think this would be wonderful with cut up chicken breast over brown rice as others have suggested. Try this!
