Creamy Broccoli Soup

Very good. I added one diced stalk of celery and one diced carrot. Also added somme thyme and garlic power. Pureed some of the soup it the end- so it was part smooth and part chunky. Add the cheese...that shouldn't be optional.

Chicken Stuffed Chiles

These are delicious. They remind me of a similar dish I get at Season's 52. I roasted the poblano's and added a few tbls of cream cheese to the filling along with cumin, paprika, and a little fresh salsa as well.

Grilled Cheeseburger Pizza

This was really tasty- with a few *slight* modifications. I layered the pizza crust with a combo of bbq sauce/mustard/ketchup, and then added ground beef that I cooked up in the skillet. Layered with the cheese and put in the oven at 450 for 10 minutes. Added the lettuce and other toppings AFTER the pizza had been cooked. Surprisingly good.

Catherine's Spicy Chicken Soup

I made this last week and it was great! I love soups and this was at the top of my list. I left out the condensed tomato soup, because I hate the fake flavor of it, and used a can of Rotel Original instead. Added some fresh cilantro and a few dashes of hot sauce, topped with a dollop of sour cream and some crushed blue tortilla chips. I could eat this often!

Spinach Enchiladas

I am reviewing my revised recipe, because I had a feeling this would be bland if made as is. Here were my changes- sautéed one diced poblano, half of a jalapeno, half of a red bell pepper, three cloves of garlic, one yellow onion, and one 4oz can of green chilies to add to spinach mixture- I also doubled the spinach. Added cumin, chili powder, parsley, and cayenne to the filling. Made “10 minute enchilada sauce” from this site to put on top. It was really, really good. The pepper combo made it much heartier. My meat loving husband even liked it!

Barbecued Beef

Good base recipe. Definitely double the sauce. I also added far more seasonings than this called for (extra mustard, and little honey, cumin, and some Tabasco sauce). I also drained off the fat and added some corn starch at the end. 6-7 hours is plenty of time for this to cook.

Vegetable Beef Soup II

Very good...when I doctored it up. Double the spices- very important. Also, I used beef stock, instead of water and I still used the bouillon. I also added about 1/4 cup of red wine and about 1 tsp of fresh dill, 2 tsp fresh parsley, and a pinch of red pepper flakes for full flavor. Even better the second day!

Ten Minute Enchilada Sauce

Excellent. Be sure to NOT use the run-of-the-mill chili powder, it'll ruin it. I used New Mexico Chili Powder, fresh garlic (sauteed with the flour), and some cayenne for a little kick. Superior to the canned stuff, by far.

Tzatziki Sauce I

Good start. I added finely diced seedless cucumbers (it needed it), chopped green onions, and 1 tsp of red wine vinegar. Also, use a good, thick greek yogurt. It does have a strong garlicky flavor, so if you are not a garlic lover, either half the garlic or lightly sauté it first to take out the raw garlic "bite". This was excellent on Pita Chips!

Classic Macaroni Salad

Used only ¼ cup of sugar…that was plenty. Also added a decent amount of paprika and garlic powder. Also, I would recommend using the diced pimentos- they really add a lot of flavor and color. Be sure to refrigerate overnight, it is much better the next day.
