Taco Seasoning I

My husband liked this, but I did not. It tasted blah and powdery, but this is what I did: Tipped by another reviewer, I added 1/2 Tbsp. flour to 3 Tbsp. of this mix to one pound of ground beef. After grilling (flour flavor would have well cooked out by this time) I added 2/3 cup water. I tasted it and decided to add a couple Tbsp. of grated fresh onion to give it some oompf. It only helped a little. *Note* some of my spices were old, and that could very well be the problem.

Chocolate Chocolate Chip Nut Muffins

These were perfect! Exactly what I was looking for... a MUFFIN, not a cupcake. I followed some prior tips: I used 1/4 cup more milk and 1/2 Tbsp. more (canola) oil. I also sprinkled the tops of the muffins with the (mini) chocolate chips and chopped nuts, but they did not sink like another reviewer had mentioned, so next time I will mix them together in the batter. Maybe they added a lot more milk and it made the batter thin. I will definitely make these again!

Fluffy Biscuits

Absolutely amazing! I can't believe "I" produced such wonderfully fluffy, tasty biscuits! I used cold butter instead of shortening, that was the only change to this wonderful recipe!

Fruit Dip VI

Heavenly!!! I couldn't stop saying MMMMM! -I used 2/3 cup brown sugar instead of one whole.- The kids loved it too. One of the young guests spooned it (over and over) into her mouth. Good thing she did that when the fruit tray was almost gone because we had to tip the last of it into the garbage!

Greek Chicken

Wonderful, Greek flavor. I used chicken breasts, butterflied for quick cooking. They marinated for only a couple of hours and I grilled them on a cast iron grill. I served them with pita bread, cucumber, tomato and tzatziki sauce. Great meal!

Pasta with Fresh Tomatoes and Corn

Very good. I used balsamic because of reviewers suggestions, but next time I will use red wine (balsamic is too strong and sweet). I used bow-tie pasta, and it was very eye-catching.

Slow-Cooked White Chili

This was awesome to use as a taco (or burrito) filling. I omitted the beans and corn so that it was more like carne asada, and put toppings and condiments out on the table so that my family could assemble their tacos however they liked. I will definitely make this again.

Sausage Egg Muffins

These were very good. I used diced polish sausage and added a little shredded cheddar half way through. Warning: I used crisco for non-stick, and cleaning the metal muffin pan afterwards was murder!!!.... I soaked and scrubbed and soaked and scrubbed and scrubbed and scrubbed. :)

World's Best Scones! From Scotland to the Savoy to the U.S.

Awesome! The best I've tried. I reduced the b.p. to 3 tsp, added one ripe banana, a little fresh nutmeg, 1/4 tsp. each: vanilla and almond extract. Wow!!!

Fresh Strawberry Scones

These were great! I pretty much followed the recipe to a T. I did not knead the dough as long as suggested, nor did I add much more flower. The dough was quite sticky and lumpy (not smooth) when I placed it on the baking sheet with parchment. I was worried that too much flour and kneading would toughen it. In the end they had a lumpy appearance, but were wonderful none the less. (Always use fresh baking soda.. discard an open can after 8-12 months.)

Amazing Italian Lemon Butter Chicken

I used 1 tbsp. fresh lemon and can not imagine using more. I also halved the butter and used A LOT more cream (I like my sauces white and creamy). I did not use capers (didn't have them on hand). My whole family really liked it. I served it on top of heart shaped pasta for valentines day. :)

Cajun Red Snapper

Turned out great! My husband (not a fish lover) really liked it. I used less cayenne and pepper and added a tbsp. of flour. I would mix a larger portion than suggested because I nearly ran out of the mix and I had a smaller quantity of fish than the recipe called for.

Pumpkin Bars I

Should be called Pumpkin Cake Bars. They were still very good though. I even reduced the measurements of salt, baking soda and powder to 1 tsp. each. I also added some pumpkin pie spice. I used one cookie sheet and put the extra into a smaller baking pan. Easy to make, try them!
