Roquefort Pear Salad

This salad is wonderful. I love the recommendation to make extra pecans, and throw some salt on them right before they're done. It's perfect. Salad is usually a fresh and decent supporting actor in a meal, but never the star. THIS salad gets Oscar for best lead.

Mushroom and Artichoke Soup

This soup was flavorful and memorable, and once the chopping is done there's not much work to do. This goes very well with warm, crusty bread. Next time, I'll throw in some barley, as the onion/shallot/artichoke texture left me wanting a bit more to chew on. Wonderful, though, and I will be making this again soon.

Roasted Red Pepper and Tomato Soup

As others had recommended, I used canned diced tomatoes rather than fresh (not so great this time of year), but it still seemed a little low on 'tomato-ness,' so I added a can of plain tomato sauce and it thickened it into a perfect texture. This also blended easier than some other soups I've made. I made it for my parents' visit to my first "real apartment," and they were very impressed! Perfect with sandwiches and a loaf of crusty bread for a nice lunch on a cold day. I will be making this again.

Vegetarian Tortilla Soup

We make this soup alll the time. It's great for casual guests and reheats well for a lunch that will make your coworkers jealous. We do tend to use a bit less broth and a bit more of the 'chunky' stuff. Add in some chopped fresh tomatoes from the garden if you have any- they're great!

Kathy's Delicious Whole Slow Cooker Chicken

I'd recommend this for anyone who hasn't cooked a whole chicken before and needs a tasty but easy place to start. I'm just out of college and made this for my mom for Mothers' Day- my first "real" meal for her, and my first chicken. It was perfect. I followed the advice of other reviews and doubled the liquid while halving the olive oil and it was great! My small bird was from the farmers' market and wasn't marked with poundage, so I just watched it carefully. I ended up going 3 hours on high and 45 minutes on low and it was just right.
