Blueberry Buckle
This was a delicious recipe. It was just as good reheated the next day. Don't be alarmed if the batter seems a bit thick. I also had to cook it a considerably while longer than the recipe calls for.

Spinach and Goat Cheese Salad with Beetroot Vinaigrette
I love this salad. It is a wonderful blend of flavors. I did use a bit of the beet juice in the dressing to thin it out. The second time I made it, I added some Granny Smith Apples just for an extra flavor and crunch. It was great with and without the apples.

Fudge Brownies I
I thought this recipe was fantastic. Often when I make homemade brownies, I make a glaze to go on them because they seem a bit dry. I didn't even need to with these. They were great.
