Apple Pie by Grandma Ople

My first apple pie and it was a treat for everyone! I modified the recipe just a smidge. I add 1tsp of vanilla to the syrup. I used 4 small granny smith, 1 large braeburn and 1 large ambrosia apple. I saved some of the glaze for top crust, which I kept intact minus for decorate slits. Everyone raved about it. It was divine and a total keeper. I kept out a piece to take to my grandmother...I'm sure she'll give her blessings to Ople!

Oatmeal Peanut Butter Cookies

Great cookie! I followed some other advice...in place of shortening/margerine, I used 1 stick of unsalted and 1 stick of salted butter. I also increased oats to 1.5 cups. And 1/2 cup dark brown, 1/2 cup light brown (it was all I had). As the cookies were beginning to cool, I popped a Hershey kiss in the center. As the kiss started to melt, I pushed the top into the center (careful to keep the point intact). Looks/tastes like a gourmet cookie! We'll see what the family says tomorrow. :)

Juicy Roasted Chicken

Juicy? YES! Although I will say that I made the mistake of using butter instead of margerine and it turned out very buttery...greasy buttery. But, the flavor was great and my husband still loved it. I'll follow the exact directions next time! My leftovers went right into a stock pot for chicken and dumplings for tomorrow night. Yum!

Vanilla - Chocolate Powdered Sugar Frosting

DELISH! So easy to make. I used a pastry bag and was able to decorate a dozen cupcapakes. I omitted the cocoa and added 3 drops of red food coloring for the prettiest pink frosting ever. So pretty...thanks so much! Definitely use BUTTER.

Grilled Swordfish with Rosemary

Very good - used splash of balasamic vinegar as someone else suggested. Would highly recommend marinating 6+ hours for the fish to really absorb flavor. Will make again!

Asian Coconut Rice

The recipe may be good but I just learned that I am NOT a fan of coconut rice. Made it with marinated swordfish and steamed veggies. Looked beautiful but apparently I really do hate anything related to coconut. The husband "liked" it but I doubt that I'll be making it again. Sorry! I'll stick with scented jasmine rice. :)

Suki's Spinach and Feta Pasta

Very, very good recipe. My husband said it's a keeper! I used 2 chicken breasts sliced thinly and roma tomatos (removing the seeds before dicing) and about 2 TB fresh oregano from my garden. I also added a couple tsp of McCormick's garlic salt, half a shallot (no onions), 2 cloves of garlic and 1 tb butter. Definitely use more spinach (it looks like a lot when you put it in the pan but it cooks way down). I used half a box of whole wheat penne pasta. Would recommend doubling the recipe if you want to use an entire box of pasta. It was saucy and delish! HIGHLY RECOMMEND!

Fusion Hummus

I got lots of compliments on it but it's not really my flavor for hummus. Be careful on the vinegar...taste as you add. I blended a bunch of crumbled feta - very nice addition. Rosemary adds excellent flavor!

Sour Cream Blueberry Muffins

OMG...out of this world good! I was skeptical but went for it as some of the other recipes had more reviews but curiosity got me. I used 2 cups fresh plus 1/2 cup frozen blueberries. I also added 1 tsp of vanilla and cinnamon per suggestion of other reviewer. I also made streusel topping (brown sugar, flour, butter). Baked in convection oven for 22 min. Came out PERFECTLY beautiful and delicious. Excellent recipe!

Key Lime Pie VIII

I'm only giving 4 stars but only because from a texture standpoint I do not prefer so much whipped topping mixed in the batter. I only addded 5 ounces of whipped topic and feel like I'd pull it down even more...maybe down to a couple ounces so that it has more of a heavy texture. I also used key limes (took me forever to get all those things squeezed but the flavor was worth it). The flavor was absolutely delicious!! Dreamy and perfect. Will definitely make again!

Award Winning Soft Chocolate Chip Cookies

Okay, so I may have messed up this recipe by cutting it in half and modifying it based on several other reviewers. I used banana pudding (it was the only thing that I had on hand and the description said any flavor) and I added 1 tsp of cream of tartar and increased vanilla to 1 tbs. I also had to bake them for 14 minutes b/c they didn't cook through to the center. They LOOK perfect but they taste...well a lot like banana flavored flour. I'm sure my husband will eat them anyway but I'll definitely follow to direction the next time I make them!

White Bean Chicken Chili

SPECTACULAR! So full of flavor! Taking other reviewers feedback into consideration, I added chili pepper (1 tsp), cornstarch (3 tsp), 1/2 cup milk, and Rotel mild tomatoes w/ chilis. This is the BEST!

MMMMM... Brownies

I used dark chocolate chips instead of milk chocolate and the brownies and cooked in a glass pie pan. The results were cake-like and I was going for the ooey-gooey kind. Oh well. Will definately try again with the right kind of chocolate as this was a very quick recipe!

Annie's Fruit Salsa and Cinnamon Chips

I made a modified version of this recipe last night in under 30 minutes. It was a total hit with absolutely none left. For the salsa, I used 1 banana, 1 cup of chopped strawberries, 1 kiwi, 1/3 (or about 1/2 to 3/4 cup) of a Braeburn apple, & 1/2 cup chopped blueberries. I drizzled honey over top and mixed thoroughly. For the chips, I took 3 medium sized flour tortillas and cut them with pizza cutter into 8 triangles each. I used 1/2 stick of melted unsalted butter and dredged the pieces into the butter then into the sugar-cinnamon mix. Baked for about 12 minutes and slid them off the cookie sheet into a bowl. I literally served these within 15 minutes of making it and everyone loved them! Will make again and again.

Oatmeal Raisin Cookies I

Awesome Recipe! I added almost 1/4 cup of additional flour. The cookies really are delicious. Crispy outside, chewy inside. I also added dark chocolate chips to a couple of batches. Yummo!
