About this Cook
I've really had a knack for cooking since I had to learn at a young age to feed younger siblings. First thing I learned to cook was goulash and potato soup! The older I get the more I really enjoy cooking so I'm so very happy I found this site for sharing ideas & suggestions!
My favorite things to cook
Love to make lasagna (or any pasta meal really), my own recipe for turkey pitas, pan-fried chicken parmesian, and chopped salads. I also like to bake cupcakes and cookies.
My favorite family cooking traditions
I don't use anything but olive oil in everything I make or bake. I will occassionally use butter where required. I grow my own herbs, try to always buy fresh fruit & veggies from local growers, and enjoy making things from scratch...just like my mom.
My cooking triumphs
I made Christmas dinner last year...a "mile-high lasagna pie" using a modified recipe that I found in Bon Appetite. It was PERFECT. You bake it in a springform pan and once done, you open the pan onto a glass cake display. You see all the beautiful colors and layers...then cut into it like a piece of cake & serve. My most magnificent triumph! To this day, my entire family still talks about that meal.
My cooking tragedies
Have had several meals that came out "ok" mainly due to over-cooking but no tragedies to speak of...yet!

Apple Pie by Grandma Ople
My first apple pie and it was a treat for everyone! I modified the recipe just a smidge. I add 1tsp of vanilla to the syrup. I used 4 small granny smith, 1 large braeburn and 1 large ambrosia apple. I saved some of the glaze for top crust, which I kept intact minus for decorate slits. Everyone raved about it. It was divine and a total keeper. I kept out a piece to take to my grandmother...I'm sure she'll give her blessings to Ople!

Oatmeal Peanut Butter Cookies
Great cookie! I followed some other advice...in place of shortening/margerine, I used 1 stick of unsalted and 1 stick of salted butter. I also increased oats to 1.5 cups. And 1/2 cup dark brown, 1/2 cup light brown (it was all I had). As the cookies were beginning to cool, I popped a Hershey kiss in the center. As the kiss started to melt, I pushed the top into the center (careful to keep the point intact). Looks/tastes like a gourmet cookie! We'll see what the family says tomorrow. :)

Juicy Roasted Chicken
Juicy? YES! Although I will say that I made the mistake of using butter instead of margerine and it turned out very buttery...greasy buttery. But, the flavor was great and my husband still loved it. I'll follow the exact directions next time! My leftovers went right into a stock pot for chicken and dumplings for tomorrow night. Yum!
