Lemon-Cream Cheese Cupcakes

I had trouble with the icing consistency, maybe because I used the Neufchatel cheese. 1 Tbsp lemon juice made it too thin to pipe & I had to add extra confectioner's sugar.

Family-Style French Toast

the great thing about this particular recipe is that it doesn't have to soak overnight, so you can have French toast whenever you want it!

Beefy Tomato Pasta Soup

Very good, hearty soup! We skipped the croutons and had skillet cornbread on the side. I scooped a dollop of ricotta cheese onto each serving. Plenty of leftovers for freezing, from my family of 4.

I used another reviewer's suggestions as follows, and had great results: "I cut out one egg and ½'ed the baking powder and baking soda. I also added ½ tsp. of cloves and ½ tsp. of nutmeg. I thought they turned out great!! VERY moist, and exactly like I wanted. For the frosting, I used 8 oz of cream cheese and 3 cups of powdered sugar, which made about ½ cup more than I needed. A GREAT recipe!"

Chicken with Stuffing

I wasn't expecting much from this recipe, but it really was quite good! I thought the stuffing would turn out mushy, but it got crisp on the top how I like it. I did put a quartered onion and some mushrooms in the bottom of the slow cooker, for extra flavor. Good stuff!

very very tasty & pretty easy, too! Quick for home made soup. Do you know the trick of inserting your kitchen shears right into the can of whole tomatoes to chop them up? Makes it easy.

Amish White Bread

I'm so excited this worked! My first try at homemade bread, and I had a few glitches: my yeast was a little old, according to the pkg. date, I didn't have bread flour and then I ran out of all purpose flour! I wound up mixing whole wheat with all-purpose with a little cake flour, and it STILL worked! It never did rise an inch over the rims of the baking pans, but I have high hopes for the next time when I'll have all the right stuff...

Best Steak Marinade in Existence

Used this for Mother's Day with the family this year; everyone raved!! Using the blender helps to emulsify the ingredients, so they don't separate when the steaks are marinating. Super fabulous!

Crepes with Spinach, Bacon and Mushroom Filling

Pretty tasty! I had a little trouble with the filling clumping up; I think I got the bechamel too thick before adding the spinach/bacon/mushrooms, and next time I'll add the cheese off heat, last. Definitely have the crepes ready to go before starting the filling. I also had to strain the sauce once I got it hot enough, to get the clumps of cooked egg out. I was pleasantly surprised by the taste of the sauce!

Butternut Squash Soup

very good, with some of the adaptations suggested by fellow reviewers: I roasted the squash, used chicken stock & real butter of course, and half the cream cheese. However, the suggested amount of cayenne was enough--if not too much--for my family. My five-year-old wanted to know why the top of her mouth felt "sour" (she still mixes up spicy with sour). This would be really excellent with French bread or bread sticks to dip.

French Breakfast Puffs

the editors must have fixed any errors in the recipe; it turned out perfectly. I did read the comments re. how great the tops are, and I came up with a solution: 1) I mixed the cinnamon sugar in a large plastic bag, 2) I left the puffs in the pan, 3) I brushed three at a time with melted butter, and then 4) I put those three in the bag with the cinnamon sugar & rolled them around to coat the whole puff. Repeat with the rest, three at a time.
