Chicken In Basil Cream

This is a "company worthy" meal that is easy enough to make for your family on a week night. I made this exactly like the recipe, except, I boiled the chicken stock for about 4 minutes to reduce it. I also simmered the sauce for about 5 minutes after adding the cream to allow the sauce to reduce additionally. Fresh basil really adds to the flavor. Thanks for a fabulous meal!

Tuscan Soup

This is a great quick and easy dinner on a chilly night. I used the entire package of Hot Italian sausage and about twice as much spinach as the recipe called for. The soup was very satisfying with just a little kick. The condensed milk gives it just the right creaminess. Served with a loaf of crusty Italian bread, olive oil and cheese. Wonderful!

Pork Chops with Raspberry Sauce

Chicken Breasts with Balsamic Vinegar and Garlic

This was very good. I made a few changes based on the suggestions of others. I omitted flouring the chicken breasts. I pounded them flat before cooking so that they would cook more evenly. I used sliced portabello mushrooms and just a little bit less (1 TBS) of the balsamic vinegar. Nice flavor. Great quick and easy recipe for chicken breasts.

Hearty Split Pea Soup

This is the best split pea soup that I have ever made. I substituted chicken broth for the water and added a honey baked ham bone. You can never have too much ham in split pea soup. I layered it and cooked it in the slow cooker. It was so delicious that I never even added the milk. A wonderful effortless recipe! Definitely a keeper.

Grandmother's Buttermilk Cornbread

Thanks to you and your grandmother my search for a delicious corn bread will stop here. It helped to read your clarification on preparation. Thanks to the reviews and other's comments, I mixed the batter in one skillet (only until combined) and then transfered the batter to a preheated cast iron skillet. It was the best!

BBQ Pork for Sandwiches

Thanks for a great recipe. I followed this pretty closely. Cooked country style ribs in beef broth for about 6 hours. At that point the pork was very tender but still had texture. I combined Austin's Own Chipolte and Sweet Baby Rays Sauces for the last step. This was a good combination of sweet and hot. This could be a great prepare ahead meal. My southern hubby thought it was as good as any pulled pork that he has ever had and he has had a lot!

Dijon-Tarragon Cream Chicken

Great week day night recipe. The only change I would make is to pound the chicken breasts to 1/2" thick before cooking so that they cook quicker. Chicken breasts can get tough when cooked too long.

Chicken Breasts with Lime Sauce

I pounded the breasts, but did not coat them in the crumb mixture. Sauteed them until brown and then removed them from the pan. I deglazed the pan with the lime juice and a little white wine. Added sage, (it was what I had on hand) and then gently stirred in the butter. Delicious and easy!

Guinness® Corned Beef

Great flavor. Added some extra garlic and cooked about 6 hours in a 200 oven. Very moist and tender. Cooked vegetables in a separate pot of water with a little added butter. Easy, delicious meal.

Very versitle recipe that can be changed to suit your own tastes. I cut taco shells into quarters and sprayed them with PAM. Pressed them into a mini muffin tin and topped with chopped chicken, cheese, pico de gaillo, etc. Delicious!

Spicy Basil Chicken

Great quick dinner. I substituted 1 TBS of canola oil for the chili oil to bring the heat down and only added 4 TBS of oyster sauce to cut down on the salt. End result was perfect. Spicy, but not too hot. Hubby added a bit of extra chili oil at the table to bring up the heat a little. Would definitely make this again. Use lots of fresh whole basil leaves.

Banana Banana Bread

Excellent and moist but not too dense. Added only 3 large, but very ripe bananas. More banana will make the bread denser. This quantity kept the texture of the bread "cake like" and a bit on the lighter side. Definitely a keeper.

Corned Beef and Cabbage II

Excellent way to prepare corned beef. Used a Staub pot instead of foil and baked in a 300 oven for about 6 hours. Rubbed some extra pickling spice and added couple cloves of garlic to the pot. Cooked vegetables separate and added a bit of water to the pot. Delicious! Will never boil corned beef again.

Cod with Italian Crumb Topping

I followed the advice of others and brushed the fish with a bit of mayo instead of the egg white. I also drizzled a bit of olive oil on the bread crumbs to make it more moist. Baked in a convection oven and the end result was excellent. Great family dinner, but you could even serve this for a casual get together.
