Anniversary Chicken I

This is how I made it: Mix the teriyaki and ranch, add chicken and marinate for a few hours. Meanwhile, cook bacon strips. Take chicken from marinade and grill over charcoal. When just done, top each piece with two strips of bacon and slice of cheese. We all liked this recipe, and it is fast and has a very "restaurant" feel to it. But even with marinating there wasn't a LOT of flavor, and I imagine the grilling added to it rather than subtracted. I hope I remember to make it again. :-)

Brownies with Peanut Butter Fudge Frosting

I made homemade brownies, and the frosting with the following variations: 5 T butter, 1/2 c peanut butter chips, 1 c peanut butter. It was super easy. I put the brownies in the fridge for 1 hour to set up, and it stayed chewy and firm at room temp. My only complaint is, even with my changes, it isn't terribly peanut buttery. Also, since I use unsalted butter, it could use a dash of salt or vanilla to kick it up a bit.

Chap Chee Noodles

This was a good starting place for me, and I appreciate the inspiration. To start with, I modified to fit our budget and family size - i used 1lb ground meat instead of the steak, and 8oz rice noodles. After it was all cooked and together, I had to modify further to get some flavor. I added cayenne, garlic powder, soy sauce, and aji miran. After that it was really good and we ate it all.

Ginger Glazed Mahi Mahi

Very easy to make, using ingredients I keep on hand. Hubby and I both liked it, but it's just not outstanding, flavor-wise. I served it over rice cooked with leeks, peas, and carrots, and topped it with a pineapple slice. Made a nice dinner; thanks for the recipe.

Clone of a Cinnabon

Much better than cinnabon, but still not our favorite homemade cinnamon roll. Definitely do line the pan and turn upside down, as the filling leaks out and makes a big sticky mess in the bottom of the pan. By inverting quickly, that is saved on the rolls.

Chicken with Lemon Sauce

I'm giving 5 stars because I really, really like this recipe - with the following changes. Made for 6 people, I used 1 1/2 lbs chicken tenderloin, 1/2 c flour, 1/2 c cheese, 3/4 tsp salt, 1/2 tsp pepper, 1 T oil, 1 c broth, 1/2 c white wine, 3 T lemon juice. I combined the dry ingredients, dredged the chicken (skipped the pounding and the eggs), and browned it in oil. Then I put chicken in a 9x13" pan; mixed the broth with the leftover flour mixture, added it to the skillet with the wine and juice, and cooked to thicken. Poured the sauce over the chicken and baked until tender. To serve, I sauteed chopped spinach with fresh basil and garlic and tossed with cooked noodles, and spooned chicken and sauce over the noodles. It beats anything I've had at the Olive Garden. Sorry this review is so long. We all liked this a LOT.

Spintz Cake

This was best cake I've ever had. I did make a few changes, but I think it would be great anyway. I used melted butter instead of oil, instant coffee instead of brewed, and baked it in 3 9"cake pans instead of two. I wasn't sure about covering the cake while it cooled, but I did it, and it turned out perfectly. Taste, texture were amazing. Another change I made was to the frosting. I added 8oz cream cheese to the peanut butter layer. That was good! My battery was dead by the time I made the frosting, so I made the recipe off the cocoa can, but it wasn't quite enough, so I melted butter and chocolate chips together for the top of the cake. Awesome!

Baked Zucchini Chips

Very good and easy! I used one whole egg, and seasoned stuffing mix for the bread crumbs. My oven only goes to 425* so it had to cook a while to get crispy. My husband and I liked them, but the children didn't; thus the 4 stars.

Roasted Root Vegetables

I used a white onion, cut in wedges, instead of the pearl onions, and left out the brussel sprouts. My boys said it was too spicy (??) but the rest of us really liked it, even my daughter who hates potatoes.
