I am a recent college grad, and love food, nutrition, and cooking. I don't eat meat because I choose not to support the currently unsustainable and wasteful practices of meat production in the US. I love experimenting in the kitchen with great fresh produce.

I look forward to cheese and potato pierogi every family holiday, made by my unbelievable Polish grandma. Some sauerkraut on the side, MMM!

Baked Scallops
I had to modify this a bit, since I had some scallops on hand, but not much else on this ingredient list. It was very easy to modify, and turned out very well. Great basic recipe that lets you use the things you have on hand. I tossed the scallops in 2-3 tbsp of olive oil (instead of using butter) and a dash of white wine vinegar. Then I topped them with a mixture of crushed tortilla chips (no crackers or bread crumbs on hand), grated parmesan, pepper, parsley, and fresh grated garlic. I left out the salt, because of the salt on the chips. We ate it over pasta-- so good!
