Spaghetti Carbonara II

Simply delicious and very easy to make. Make sure you have a VERY large frying pan when you get ready to toss around the veggies and a pound of spaghetti while trying to cook 4 eggs. That's the roughest part but I think my skillet was just on the lower end of just-big-enough category.

needs more spice... It tastes great, but I thought the sausage would add more to it than it did. dressing it up with some herbs and something spicy would make it even better.

World's Best Lasagna

This was the best I've had in literally years. I don't remember having lasagna this good since I was a kid. No reason to change a single thing about this recipe. I do warn people that you may have to alter the way you cook the noodles if you're using whole wheat lasagna.

Angel Hair with Feta and Sun-Dried Tomatoes

This was REALLY tasty. The flavor was exceptional but if you follow the recipe too closely then you're going to end up with some relatively dry pasta. I used a bit of olive oil/butter to loosen up the noodles a bit. I thought about using the oil that the tomatoes were packed in but I think it would've been too strong of a flavor.

Chicken Marsala

Delicious. I didn't change a thing about this recipe except I thought to add just a touch of water (would probably be better with chicken broth) about 4 minutes before it was done because the sauce was getting a bit thick on me. The chicken was perfectly cooked and very tender. The sauce was sweet and delicious and the wine made a great after dinner sipper!

Italian Sausage Soup

This took me a little more time to prepare than suggested, but it was fantastic. I did almost everything right by the recipe except I used kale instead of spinach and I thickened it into a stew with 4 ounces less broth and the addition of a little corn starch. SO GOOD! I served it in sourdough bread bowls and the dish received great compliments. Simple ingredients, awesome flavor!
