Crustless Spinach Quiche
Super easy and delicious! I was determined to only use what I had in the kitchen, so I used a 10 oz bag of fresh spinach chopped (I took off the stems), about 3 cups of mozzerella cheese, and about 5 fresh mushrooms, plus the onions, oil, and spices. I did have one pie shell, so i put half in pie shell and half in casserole dish. Both were wonderful. I will probably add a bit more spices next time or maybe tomato for color.
