Curried Hummus

meh?! not very good. tastes like curry seasoning with lemon. I won't be making this again. It is doable with Saracha hot sauce mixed in...and bell peppers to eat it with...but i like a hummus that can hold it's own...this does not in my opinion.

Baked Zucchini Chips

I have another recipe for "Fried" Zucchini sticks (really baked) and it calls for a bunch of oil. This is BY FAR better...I used Olive Oil spray like other users suggested before I baked and after I flipped. I used a gluten free "italian herbed" bread crumb from Whole Foods Market...vegan parmesean cheese, and skipped the black pepper. AWESOME! Thin slices yield crispier zucchini chips...so darn good. Definitely a keeper!

Baingan Bharta (Eggplant Curry)

Oh WOW! Indian Dish attempt #2 and MAN I"M HAPPY! SO SO SO GOOD! I added peas, and I used about a cup of little plum tomatoes (halved) I ommitted the yogurt (dairy free diet) and come to think of it...forgot the cilantro. But I LOVE IT...there is a different flavor, that maybe I put a little too much of some seasoning in (since i'm new to the seasonings) but I'm making it again!!! FOR SURE! Went great with brown basmati rice and Aloo Phujia from this site! AWESOME!

OH WOW! I'm in love. Just found out about indian food...haha...and I'm on a cooking spree! This was FANTASTIC! I used a can of diced tomatoes with green chilis....very good! May add peas next time. This morning, I made some egg whites, through in some of the potatoes and brown basmati rice...OMG! My new favorite potato recipe FOR SURE! Through that in a burrito...BAMMM!!!!!

Pumpkin Pancakes

Love love love! I do like a bit sweeter so I added 2TBS. brown sugar, 1/4 C pumpkin (because i wanted to use it up) and then eye balled a little more flour, a little more milk(i used rice milk by the way) and I added 1 tsp. vanilla as suggested by another member. And was it just me, but I got 14 1/4C. pancakes...give or take a little because I added a little more pumpkin, and milk and flour respectively??!! Geez. But an AWESOME flavor...add chunks of pecans for a little extra flair. No butter or syrup needed! Which is good, because you will be eating a ton of the pancakes and that way you don't add the extra calories with the toppings. Just more pancakes. haha

Granny Kat's Pumpkin Roll

So...wow!...just wow! I absolutely love this recipe as did everyone else who tried it!!! I made mine gluten and dairy free by using a GF all-purpose flour and Tofutti (non-hydrogenated) cream cheese. My oven bakes a bit hotter, so 10 minutes at 350 was perfect. I laid parchment paper over a regular dish towel, popped the pumpkin onto the parchement, rolled it in the parchment, and then rolled the towel around THAT (to keep it all together) and the OFF TO THE FREEZER for about 30 minutes. The filling was fantastic! Thick and tasty! This is going to be a staple!!!!! And tomorrow...pumpkin pancakes from this site! YAY!

MMMMM... Brownies

Wow...fantastic! Brownies are one of those things that are either great, or just not good at all...these are FABULOUS...and so fudgey! I read someone who said, they weren't fudgey...they are way off in left field. I marbled some peanut butter on half for my husband, and next time i'm going to layer brownies, peanut butter (maybe even my chocolate peanut butter from whole foods) and then another layer of brownies...OOO thank you for the stomach ache! haha, i ate too much.

Grilled Asparagus

DELICIOUS! Oil, kosher salt, pepper and the balsamic vinegar that others recommended! I set in a ziplock and let marinade for about 2-3 hours...on the grill for about 5-6 minutes! GREAT! This and the Byrdhouse Marinated TOmatoes and Mushrooms recipe from this site, made veggies for dinner tonight SO FUN! Thank you!

Byrdhouse Marinated Tomatoes and Mushrooms

Totally simple and delicious. Almost like heirloom tomatoe salad! I don't think you can go wrong with good balsamic, oil and s&p!! I added shredded parmesean & romano (premixed from digiorno) when I plated up! I picked this recipe to use up some mushrooms and tomatoes that were on their last days, SO GLAD I DID...can't wait to use fresh beautiful ingredients! 5 STARS...thank you!

Cake and Ice Cream Cake

I thought this was great! I had to add a little something though! I made homemade Ben & Jerry's Strawberry ice cream and bought an Angel Food Cake from WholeFoods. Layered it in a class bread pan...angel food, dry quaker oats, ice cream...repeat! IT WAS DELICIOUS...i absolutely love oatmeal in pretty much anything, and it worked great with this. I find that even though it doesn't look AMAZING in the dish, it didn't matter, because it was simply delicious! THANKS for the idea!
