About this Cook
I'm a single mom of one. I love to bake and cook! I love being outdoors; cooking over a campfire is definitely a challenge, but is fun and almost always turns out a great made-up meal. I like rollerblading, disc golf, sweedish metal music, technology, cooking from scratch, and healthy foods...most of the time.
My favorite things to cook
Grilled anything, cheesecakes (both ricotta and cream cheese), fudge, cakes (especially naturally sweetened), new cookie experiments, baked mac and cheese, turkey creations.
My favorite family cooking traditions
Meatless cooking. We grew up lacto-ovo vegetarian, but now I eat turkey, rarely chicken, and some types of fish.
My cooking triumphs
Mini ricotta cheesecakes, topped with a peach sauce whipped cream...all from scratch of course.
My cooking tragedies
Fudge that doesn't sit...two times in a row. Very frustrating!

Pineapple Cobbler
This took forever to bake, a lot more than the 30 minutes it says. WAY too much butter!! I used between half a stick and 3/4 of a stick and it was too much, and I love my butter. The only thing I did different was add a light strudel topping and I used fresh pinapple cut into chunks. I wouldn't make this exact recipe again, but I would tweak it and make it again because the the flavor was delicious.

Cinnamon Sugar Tortilla Delight
Delicious! My brother and I have been making these since we were kids. I've tried with both flour and white corn tortillas. Both ways are quite delicious!

Peanut Butter Quesadillas
This was great, my 5 year old says "it's delicious!" We both loved this. I used corn tortillas for mine, flour for hers. I added a small piece of chocolate to each and mixed honey and strawberry jam for the dip. These were great, we'll definitely be making them again! Thanks!
