Soft Gingersnaps

These are fantastic. I wanted to make something with ginger for my son with a stomachache...these were delicious!! The recipe made quite a few, it could definitely be halved for a smaller family.

The chicken was AMAZING. Juicy, tasty, zesty. Loved it, loved it. I replaced the zucchini w/yellow peppers though, just a personal preferance and the kabobs looked brighter. These were a hit on the grill for Memorial Day.

Raspberry Lemonade Pie

This was very sweet - I read the other reviews about it being too lemony, so I replaced the lemon jello w/peach and kept everything else the same. It turned out a light pink. Very pretty, but maybe a tiny bit too sweet. Probably the frozen lemonade needs to be replaced with another kind of juice.

Cheddar Biscuit Cups

I don't know what I did wrong, but mine turned out horribly. They were too floury and they were not at all flavorful or good. it was impossible to mix w/that little wet ingredients, except it said mix just until moistened. We ended up throwing them out. =(

Roast Pork with Citrus Molasses Au Jus

I thought this recipe was fantastic & just submitted a photo for review =) I used Clementine oranges & my 3 & 5 year old loved them. Definitely a good way to make pork fun for little kids. I made a 1.83 lb pork roast, so I added about 20 minutes to the time in the recipe and it came out perfect. The molasses/onions/broth/brown sugar/oranges au jus was delicious.
