Penne Pasta with Spinach and Bacon

Reviewed: Sep. 17, 2009
Rated 3 stars as is. Very good recipe to start from, but I think it could use a few adjustments. I cooked the tomatoes, spinach, etc together as others suggested. I also added grilled chicken and drained the bacon fat as well. At the end I added chicken stock and parmesean to make it more of a sauce. With those alterations, it was a 5, but as is, I'd give it a 3. Thanks for the recipe!

Spicy Bean Salsa

Reviewed: Sep. 16, 2009
I omitted the bell pepper both times because I just didn't have it. Ridiculously easy to make, most everything I already had. I used one jalapeno and I didn't think it was "spicy"-which is good for me because I don't care for spicy foods-but I thought the one jalapeno gave great flavor. Next time will try to add cilantro and lime, but great easy recipe!

Honey Mustard Dressing II

Reviewed: Aug. 10, 2009
I was surprised at how well this turned out. I ended up adding about a teaspoon more of mustard and honey because to me the mayo taste was a little stong. but, it was very yummy just the way that it was! very easy and had everything on hand (i used bottled lemon juice and it still came out great)

Broccoli Chicken Casserole I

Reviewed: Jul. 28, 2009
Rated 4 stars as I altered recipe a little based on others' suggestions. not a big fan of mayo, so i used 2 cans of cream of chicken soup and milk. instead of boiling the chicken, i sauteed chicken tenders (that's what i had) on the stovetop, let cool, and then cut into chunks. if you season your chicken, i wouldn't add a whole lot of salt becuase with the soup and the stuffing, i thought the dish had enough salt. i also went ahead and prepared the stuffing, let it cool, and then sprinkled it on top. It was SOOOOO yummy! I think as the recipe is written, would still good, but i think the mayo would make it too rich for my taste. great simple recipe that takes little preparation. the hubby loved it as well!

Salsa Chicken

LOVED this recipe. Very easy and used simple ingredients I already had at home. Husband loved it. Use a really good salsa though, as that will make all the difference. Chicken was very flavorful and moist

Baked Ziti I

Reviewed: May 17, 2009
Rated as 4 stars because I made a couple changes. I am not a big fan of sour cream, so I substituted ricotta instead. Also, I sauteed the hamburger with onion and garlic. Instead of layering the sauce and pasta, I mixed it all together before baking. Very easy, flavors were great, easy dish and had tons of leftovers!

Sloppy Joes II

Reviewed: Jul. 31, 2008
I have always hated sloppy joes because I had always had them from a can. My family loves them though, so I saw this recipe and thought I'd try it. It was so easy, and I had everything I needed to make it already at home. It was so yummy and got better and better the longer it cooked. Thank you! My family loved it as well and we all have agreed no more cans!! (I did add a generous teaspoon of worchestire sauce)

Baked Teriyaki Chicken

Reviewed: Jul. 11, 2008
Great recipe with things I already had in my pantry (I had boneless skinless thighs so I used that). Very easy to prepare. I didn't have fresh garlic though so I used about 1/4 tsp of garlic powder and it was still very good. Thanks for the great recipe! I will NEVER buy the bottled teriyaki marinade sauce again!

Caramel Apple Pork Chops

Reviewed: Feb. 9, 2008
Yummy! I took leftovers to work the next day and it was even better! I changed mine up a little bit, I only browned the chops in the skillet and then placed them in the casserole dish. When I combined the apples with the sugar mixture, I also added a little bit of apple juice. Then, once I poured the apples over the chops, I baked it in the oven at 350 for about 15 minutes. SO GOOD! Even without my adjustments though, still a 5 star recipe!

Hamburger Potato Casserole

Family loves it. Get frequent requests for it. Next time I think I will do as other users suggest and try to sneak some veggies in it. But it's a good, easy, simple recipe that uses ingredients I always keep on hand.
