Pumpkin Bread IV
I am sure this recipe is wonderful as is, but for anyone who wants to change it up to make it a bit more healthful, here is what I did. And it was very tasty!! For the oil, I used olive oil and substituted half of it with applesauce. I used turbinado/raw sugar in place of the white sugar, and cut it back 3 cups and added 1/2 cup of molasses. I used 4 cups whole wheat flour in place of all-purpose, and added 3/4 cup of wheat germ. I left off the cloves because I didn't have them. I also threw in about a cup of chopped walnut pieces, then sprinkled some of the chopped nuts over the top of each loaf before putting it in the oven. I guess by the time I finished, it was like a whole new recipe, but it tasted really good and I was able to feel pretty good about eating it!
