Basil Shrimp

My oldest son who has some serious aversions to food (including seafood) LOVES this recipe, and this actually turned him down the path of being a seafood lover. Very tasty... and pretty easy if you have the right ingredients!

Fireman's Apple Pie

We love this recipe because it's a lot less work than your normal apple pie... BUT... it can come out a bit like "cake" if you don't measure the flour correctly. We also tend to put less sugar in it, only because we don't like our deserts so sweet. That being said, the best compliment I can give is that 9 of the last 10 apple pies that we've made have been this recipe!

Pizza Dough I

EASY EASY EASY!! It took me less than an hour to make home made pizza... and it came out great! Now if I could only find a good recipe for pizza sauce...

Brandied Shrimp with Pasta

This was delicious. It does take a bit of time to peel and devein 31-40 shrimp, but it was well worth it. My only other gripe was that the brandy didn't light up when I put a flame to it, although I didn't have a match (I was using a lighter). I took a full star off because it took so long to peel and devein the shrip... otherwise it would have been a 5-star meal. The rest of the prep work is EASY!! We will definitely have this again.

Red Snapper Livornese

Needs more salt. The flavor was exactly what I was looking for in terms of pure flavor, but even WITH the addition of capers and olives, it still needed some salt. I liked the spicy kick that the dash of pepper flakes gives it.

Baked Dijon Salmon

To give you an idea of how good it turned out, after I made it on a Thursday, ond of my friends (who happens to be Peruvian) who I cooked for "borrowed" the recipe and made it for a party of 15. The party-goers were talking for days about this delicious "Peruvian" salmon dish that they had tried!! Funny stuff! In any case, incredible flavor and was easy if you have the right ingredients. I added a bit of dill to the mixture... turned out fantastic! Not spicy, and definitely a friendly flavor for those who are iffy about fishy. I would recommend you eat this dish at least once a month!

Black Bean Hummus

Very good hummus, but very different from the classic garbanzo bean variety. My brother and I took this on our cross-country trip and ate some every day for 5 days straight and didn't get tired of it! The key to getting that hummus taste out of the black bean is the tahini. If you don't use tahini, you may as well just have some refried beans from your local Mexican restaurant. This is also an easy recipe to vary with other ingredients. Just remember that if you're going to add different spices, use fresh ones! There is no substitute!

Hummus III

This recipe produces a great, basic hummus that is easy to modify with other interesting ingredients. Fresh ginger root is good (you only need a little bit!), as well as fresh mint, cilantro, onion, cayenne, shallots... in any combination. But for basic hummus, I use this all the time.
