Chicken Pot Pie IX

a-freakin-mazing! Made sure to be heavy handed with the sauce, as other suggested. I also added 1/4 tsp of Herbs de Provence, A little less than a tablespoon of fresh tarragon, and i added mushrooms to the onions while sauteeing. I also added in some garlic which is always good! No chicken for me since I am a vegetarian, but I did toss in some tofu instead which I found to be yummitastic. Brushed the crust with egg whites as also suggested and it was a great dish!! thank you so much for sharing. edit: my boyfriend asks me to make this at LEAST once a week now. I think this might be the best recipe on this site! We have added some sweet corm to it, and that goes really well also!

Seven Layer Tortilla Pie

super yummy! I added some corn and olives as suggested and it was a good compliment to this dish. Also added some red enchilada sauce to a couple of the layers, but not all of them. Some sliced avocado on top and sour cream on on the side. this was a big hit with the boyfriend especially so we will be making this again!

Chuck's Favorite Mac and Cheese

I had been craving home made mac and cheese for a few weeks and finally gave in and decided to make it. I came across this recipe and I am SO happy I decided on this one!! I did make a few small modifications for my own tastes: I added about 1/2 cup of peas, I chopped and sauteed one leek with a bit of garlic in EVOO and added that to the mixture at the end which tasted awesome in my opinion! I also subbed in one 12oz block of firm tofu for the cottage cheese because I had some on hand that i wanted to use up and I think that it worked quite well for the consistency. Definitely cut the bread crumbs down to about a 1/4 cup. I can't wait to make this again!

Vegetarian Tortilla Soup

AMAZING!!! I ate every single bite. i only made slight adjustments. I added a can of black beans, and I used 1 7oz can of chiles and added a couple sliced chipotle peppers in adobo. It added the right amount of kick for my taste! Excellent recipe!!!!

Greek Lemon Chicken Soup

This was really good!! I made some modifications based on dietary preferences and other user reviews. I don't eat meat so I used firm tofu instead of chicken. I thought it tasted great! I used 5 egg yolks instead of 8, and veggie broth instead of chicken broth. I eliminated the soup base entirely because of the reviews stating how salty it came out. I don't think the recipe suffered! I started the base by doing a sautee of the onions and added a generous amount of garlic in EVOO. After sweating that for a few minutes, I added the rest of the veggies and a 1/2 cup white wine. I let that simmer for a few minutes and then continued as the recipe called. I switched the rice for uncooked Orzo and it came out well. I think next time I will follow another users review and keep the pasta separate so it doesn't get too saturated in the leftovers. Overall this was a great recipe. Everyone who ate it loved it! thanks for sharing!

Zucchini Herb Casserole

This was awesome! But I did make a few modifications; I added two diced shallots, doubled up on the spices and added a dusting of red pepper flakes for some kick. I used about 1/2 of the cheese and I used a cheddar/pepper jack blend. I also added in some diced red bell pepper, subbed for brown rice and used a can of diced tomatoes rather than the fresh. It was a BIG hit and I am positive I will be making this again. Thanks so much for sharing!!

Sour Cream Chicken Enchiladas

these are fabulous. I made these a few weeks ago and my boyfriend has been asking me to make them again. be prepared for a lot of dishes but I thought it was worth it. Tonight we are going to try them with shrimp to see how that turns out. Thanks!

Mediterranean Chik'n and Artichokes

one star because the site won't let me give it a zero. this is bland bland bland. and the morning star chik'n is pretty rubbery. the whole house did not care for it. maybe i did something wrong but it seemed pretty straightforward. thanks for sharing, but i would not reccommend this one

Creamy Pesto Shrimp

this was pretty good! i made some modifications based on other reviews and i think it made the dish much better for our palette. I halved the butter, cream( we used half & half) and the cheese because i wanted a stronger pesto flavor.If you use all of the cheese when you half any of the other stuff its too goopy and you'll have to add more cream. i sauteed up some asparagus and red bell peppers with some garlic and olive oil for about 10 minutes, tossed that mix into the sauce and used the same pan to saute the shrimp with some garlic, olive oil and threw on a handful of chopped scallions and some black pepper. once heated through, i tossed them into the sauce and let it all simmer for about 5 minutes while the pasta finished. We used linguini AND tortelini to make it fun. Overall this was a great recipe, thanks!

Garlic Chicken Stir Fry

I've made this at least 5 times since discovering it on here. Just a few small modifications I make to it: We add mushrooms, celery and at the end throw in some bean sprouts. I serve it over brown rice that I cook in chicken broth and we love it every single time!! thanks for the great recipe!

Anaheim Fish Tacos

wow, these were really good! we made a few small modifications that I think would bump this up to 5 stars: we used tilapia instead of halibut. Much less $$ and I think Tilapia is a perfect fish for tacos. I took a cue from other reviewers and drained the juice and whipped up a sauce with it adding sour cream, a pinch of corn starch to thicken it up, cilantro and some red pepper flakes. We also subbed flour tortillas for the corn because my boyfriend doesn't like the latter. Added some cabbage for crunch and enjoyed them thoroughly... thanks for the great recipe!!

The Best Vegetarian Chili in the World

phenomenal!! My boyfriend and i decided to go vegetarian for a month to see how we liked it, and this recipe is by far the best one I have made so far in our experiment. Better even than anything I have had with real meat!! I made only small adjustments: I halfed the recipe based on other user reviews saying how MUCH this made but still used a full can of all the beans. I also useed a red bell pepper, an orange one and a green one. It gives it an appealing color and I love bell peppers in general. I lined the bottom of our bowls with tortilla strips and topped it with a dollop of sour cream and some sharp cheddar with a sprig of cilantro. Thanks for the fabulous recipe, we will be enjoying this one for a long time!!
