Tacos in Pasta Shells

Reviewed: Aug. 3, 2009
Really great, but I did need to add some flavor to the meat and I am glad I did! Added some chopped onions and garlic as well as some taco seasoning. Substituted Neufchatel for the cream cheese, and ground turkey for the ground beef. Instead of butter I tossed the shells in olive oil. The end result was incredible. I scarfed the leftovers today for lunch and wish I had more for dinner. =)

Oia Greek Salad

Reviewed: May 20, 2009
Pretty close to what I grew up on in my greek family. I nix the capers, and dress it with olive oil and vinegar, maybe a bit of lemon if I have it on hand. Make sure you use Kalamata olives. Also great with avocado if you have any on hand. Not authentic, but it goes really well with the mix. thanks for posting! =)

Spicy Orange Teriyaki Marinade

Reviewed: Apr. 18, 2009
This is by far the best marinade I have ever used on chicken. I was a bit hesitant at first, seemed like a LOT of sambal (chili garlic) but it wasn't overwhelming at all. The sweetness of the marmalade must balance the heat somehow. I made this twice. Once we marinaded just for a couple hours, and the next time we let it sit for about 12 hours. Trust me, the longer you let it sit, the better! One note: Do NOT substitute crushed pineapples. The absolute BEST part of the whole meal is eating the barbequed pineapple cubes. I am sure the flavor would be the same on the chicken, but you don't want to miss out on the grilled pineapple. Its to die for! The only modification I made to the recipe was using Mirin ( Japanese cooking wine) in place of the Chinese cooking wine because that is what I had on hand. Followed everything else to a "T" and it made the perfect amount of marinade for 4 chicken thighs. If you are cooking more than that, I would advise you double the recipe. Thank you so much, this is our new favorite!

Grandma's Green Bean Casserole

Reviewed: Mar. 15, 2009
tasty recipe. I did not add the teaspoon of salt, but dusted it with some seasoning salt to taste. I sauteed the onion in the butter, added the flour and sugar and then mixed those into the bean/sour cream mixture. I only used about 1.5 cups of cheese and did not add the extra table spoon of butter to the crackers as they are already buttered and I don't think it affected the recipe. Overall, this was good but I may add some spices next time through for a little more oomph :)

Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 1, 2009
thanks!!! We were both sick and this was a lifesaver!! So easy, and really tasty. The only thing I added was a can of cream of mushroom soup and a little extra veggie broth. We used alphabet pasta for the noodles. I loved it!

Paprika Chicken with Mushrooms

this one was just OK for us. Good, but would need some work if I were to try this one again. The sauce was tasty, but visually not so appealing. Thanks for sharing, this is probably great for others! :)

Healing Cabbage Soup

Reviewed: Feb. 22, 2009
this was so good, I kinda wish I was sick to really appreciate the "healing" element! The beauty of this recipe is that it is SO adaptable! It is delicious on its own, but so easy to tweak with the addition of fresh veggies and spices should you choose to do so. Lots of leftovers which we will enjoy for lunch tomorrow :)

Rich and Creamy Tomato Basil Soup

Reviewed: Feb. 16, 2009
This is incredibly delicious!! I admit I cheated, and made it a TAD healthier. I used half and half, and only 1/4 cup butter. I can imagine how decadent this would be with the heavy cream and the full portion of butter though! I used 6 VERY ripe roma tomatoes and simmered for about 45 minutes. I sliced up a baguette and topped the slices with shredded gruyere cheese. (tried it with mozzarella and cheddar, but gruyere was by far the best!!) Toasted the slices in the oven and served with the soup as well as a Caesar salad. I absolutely cannot wait to make this again!

Crispy Orange Beef

This was really good, but I think I will play around with the ingredients next time through. Less sugar and will add some Sambal for a bit of heat. Overall, a very good meal, we both enjoyed it alot, thanks!

Chicken Salad Sandwiches

Reviewed: Feb. 1, 2009
these were really good!! Made just the smallest changes. Used a red bell pepper instead of green, nixed the olives, and only added salt and pepper to taste. We used ciabatta and croissants for the bread, but I'm sure the english muffins would be great as well. Whatever bread you prefer would work. Only other difference was using Miracle whip instead of mayo because someone used all the mayo and didn't tell me. =) I used a pre-cooked rotisserie chicken and just pulled/shredded the meat from it. Much easier than cooking and cubing for me. thanks for sharing, I'll make this again!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 30, 2009
These were the best meatballs I have ever made. RAVE reviews. I did use turkey meat and about a tablespoon of milk for moisture, but other than that followed exactly. This was AWESOME! Way better than browning the meatballs first. I'll never go back! The sauce was great as a base recipe, but I did add a few things to make it my own. Chopped bell peppers, some red pepper flakes, one can diced fire-roasted tomatoes and about a tablespoon of fresh basil at the end. Super good recipe!!! thanks!

Chicken Cordon Bleu II

Reviewed: Jan. 22, 2009
the chicken is great, but the wine sauce is to die for. I am embarrassed to admit that we actually licked the pan before washing it! I tied the chicken instead of using the toothpicks. The entire dish was a dream. I served it over long grain rice and some asparagus. Not something I could make every week, but this dish was worth every single calorie!

Shepherd's Pie VI

Reviewed: Jan. 21, 2009
This was great, although I did make some changes based on other reviews. I used a 10oz frozen peas and carrots pack, added an extra tablespoon of ketchup, a little over 1/4 cup Worcestershire and I used ground turkey instead of ground beef just as a personal preference. The only thing I will do differently next time is add a little more flavor to my potatoes. They were good, but I might add some more spices next time. Overall, this was a great recipe! We'll make this again!

Spinach and Mushroom Frittata

Reviewed: Jan. 14, 2009
Edible, but just not my cup-o-tea. I found the spinach to be very overwhelming in texture as well as flavor. I couldn't taste the ricotta at all. I may try a variation of this again, but as written it just missed the mark for me. Thank you so much for sharing though, I'm sure others will think it is great if they are big spinach fans. =)

Chicken and Biscuit Casserole

Reviewed: Jan. 7, 2009
WOW WOW WOW!!!! We loved this! I only modified in the slightest ways. Out of laziness, I used the pillsbury buttermilk pre-made biscuits. Say what you will, but they are always good. =) For the chicken, I used a pre-cooked rotisserie chicken from the grocery store, and poured the juices at the bottom of the pan into the casserole mixture. In place of the basil I used my favorite dry spice blend " Herbs de Provence" which consists of rosemary, marjoram, basil, bay leaf, thyme and lavender. I use it for nearly everything. I also added 1/2 tsp of chicken soup base which probably didn't do anything, but I thought I would include it in the review. I can't wait to make this again. THANK YOU!!

Holiday Peppermint Bark

Reviewed: Dec. 4, 2008
i wish i had just followed the recipe instead of taking the advice to completely change it. I tried doing a double boil on it, and the chocolate never smoothed and I burned myself to high heaven with the steam. Put it in the microwave and it destroyed the chocolate at that point. I had to throw the whole shebang away. I may try this again, but I'll follow the simple instructions next time.
