Baked Scallops

I am not a seafood person but my husband loved this. I loved how quick and easy it was. I followed the advice of many others who rolled the scallops in butter/garlic, then the bread crumb mix. Definitely a keeper.

Huh. Not sure what to say...the sauce was almost 'tart'--maybe too much rice wine? Very easy and smelled great but didn't taste as I had hoped.

Chicken Pot Pie IX

I have made this many times and LOVE it. I like to add one potato (diced) and some frozen corn, as well as use 1.5X the gravy. I also like to add 1/4 t. garlic powder and brush the crust with beaten egg white. My way or as written, it is FANTASTIC!!!

Black Magic Cake

This cake was a huge hit. I followed the directions exactly, no changes and it was perfect. A little hard to get it out of the pans but the flavor and moistness of the cake more than made up for that!

Blueberry Cream Muffins

Good but I feel like there is something missing. I increased the sugar and blueberries but it still needs something...not sure what. Nice and moist, easy to make, makes a lot. I would actually give this 3.5 stars if I could.

Popovers

Ridiculously easy and good! I don't have a popover tin (yet!) so I used a muffin tin. Put a dab of butter in some cups and left some without butter. As many others have said, the ones with butter came out easily, those without butter got totally stuck--I had to tear them out. Will make again--soon!

Krista's Sticky Honey Garlic Wings

I followed the recipe exactly with the exception of using chicken breasts instead of wings. The flavor was okay, not great. Won't be making again, but if I did, I would probably add more cornstarch--it did not thicken and get 'sticky' as much as I would have liked, even though I tried cooking it down.

Southwestern Egg Rolls

I have tried A LOT of recipes on this site, and this is one of my absolute favorites--a recipe rock-star. I omit the spinach and parsley and use cilantro instead. Still awesome with less cheese. Bake for 15 min. at 425. DEFINITELY use spring roll wrappers instead of tortillas. I get mine at an Asian market--they bake up super-crispy and wonderful!

Famous Butter Chicken

Loved it! I doubled the cracker/seasoning mixture. Added a little extra garlic, also minced onion-personal preference. Used 1/2 stick butter. Be sure to either drizzle butter over the chicken while cooking or flip it over part-way through so both sides are equally wonderful. Very simple and delicious!

Ham and Cheese Puffs

Yum!!! The minor changes I made were: cheddar not swiss, made 12 large not 24 small, and cut WAY back on the egg because I don't like egg and wasn't sure if it would be eggy tasting. I threw in a bit of mayo--again, personal preference. Very easy to throw together and delicious! Thanks for sharing!

Cashew Chicken I

I enjoyed this very much and have never had anything quite like it. Very easy to make. No trouble with the coating sticking. Hubby was looking for some type of sauce to put over but I thought it was terrific as-is.

Reuben Casserole

We love this and have made several times. I put the meat on the bottom, then sauerkraut, 1,000-island dressing, and top with bread cubes lightly tossed with melted butter. I bake for about 15 minutes until the bread gets crispy, then add grated swiss and bake until the cheese melts. I usually end by broiling the cheese for a minute or two. Yummy.

Chocolate Cream Pie II

VERY chocolatey. I have made this for three events and it was a big hit each time. I, too, increased the cornstarch to 4 T. and made homemade whipped cream. Fabulous!
