About this Cook
I'm a SAHM mom to 6 fantastic kids (five that I'm currently homeschooling) and happily married to the love of my life since 1987. I love to cook and bake and try new recipes all the time. That's why allrecipes.com is one of my very favorite websites to visit all the time.
My favorite things to cook
I love to cook many things, from soups to cookies and cakes and more. I think that my most favorite thing to cook is anything that I can put in the slow cooker or roaster and walk away.
My favorite family cooking traditions
Once a week, the kids help me in the kitchen to cook the entire meal. I use this as a learning experience for them (such as classroom time) but one that's loads of fun. One other tradition that we just started last year that I love is this. About a week before Thanksgiving I post the list of recipes that we'll be serving for the special meal. I let each child pick out what one they want to fix and pretty much let them do it all. I will help if they need or want me to but it gives them such pride to say that they did it all by themselves. It was a terrific family together and built memories that will last forever.
My cooking triumphs
My cooking triumphs would have to be that I no longer set the smoke alarm off when the meal is ready! Ha! Ha! Ha! I've been married since 1987 and when we were first married we ate mostly frozen foods, convenience foods (such as pre-packaged meals) and lots of Hamburger Helper. Not anymore! I love to experiment with different and new recipes and try them out on my family.
My cooking tragedies
One of my worst cooking tragedies was when I was trying to 'man' the grill outside the kitchen door and work on the rest of the meal inside. I stepped out the back door long enough to turn over the meat on the grill (while I had butter melting in a pan on the stove inside!) and came back into the kitchen in time to see flames shoot out of the pan. The smoke was horrible and I had to throw out the pan because it was permanently damaged. We can laugh about it nowadays but back then it wasn't funny! My husband now does all the grilling outside while he leaves the indoor cooking up to me. And it's a good thing too! =:o)

Fluffy Biscuits
My family and I love these biscuits. I used buttermilk instead and found the taste was even better. I also lightly greased my baking pan with melted butter before putting the biscuits in the pan then brushed the biscuits with melted butter. Absolutely awesome! I've also brushed the biscuits with melted butter just after removing them from the oven. Of all the biscuits I've ever made, this is the one my family begs for over and over again! My daughter entered these for her 4-H baking project this year and, while it only won a blue ribbon, they were the biggest, fluffiest biscuits of all the entries. The judge could not stop nibbling on them and people were amazed at how big, fluffy and tasty they really were. Some biscuits that rise this high can be very dry but not these! If you're looking for the perfect biscuit recipe, you just found it! Thanks Nancy!

Banana Muffins with a Crunch
We love, love, love this recipe! Absolutely delicious! I made a few changes to it because of a lack of ingredients but they still came out fantastic. I added a 1/2 choc. chips instead of banana chips and because I didn't have any granola on hand, I added Honey Bunches of Oats cereal instead. My daughter made these for our local 4-H fair and won Champion and they will now be judged at our State Fair in August! Thank you for a divine recipe! We'll let you know if it wins Champion at State. Yummy!

Shredded Beef Chimichangas
My family and I absolutely loved this recipe! Superb taste that even the kids loved. I loved that I didn't have to deep fry them and they still tasted terrific. Thanks for sharing this wonderful recipe, Helena. I will be making this recipe again soon. Definitely worth 5 stars!
