Gourmet Mushroom Risotto
Holy hell, this was good!
I used less broth and more wine (1 1/4 cup wine - 2 cups broth for a 3 person serving) and it came out perfect. I might use a tad less butter than called for next time, but only because I really don't like anything creamy. My wife loved it just as it was. This is my first time making risotto and it was a huge hit, thanks!
