Cornish Game Hens with Garlic and Rosemary

I used thyme instead of rosemary - personal preference. Also used minced garlic instead of whole cloves. Only did two hens but the only thing I cut down on was the oil - otherwise it worked out fine. I had to cook the hens about 75 minutes, and they were still just barely done (thermometer read 165). I boiled the sauce 10 minutes before I just added cornstarch to speed things up. Flavor was magnificent, though - would absolutely serve for company next time!

great idea, but didn't love it. cutting the potatoes wasn't the problem - I struggled to get the seasoning and butter (and, later, the cheese) into the pieces.

Bacon Cheddar Chive Muffins

so I used sour cream instead of the CoM soup, butter instead of the veg oil, and 8tsp fresh chives instead of the 4tsp dried. Baked about 23 minutes - smelled wonderful! They were a bit denser than I was expecting, but hubby likes biscuits better than muffins so no problem there. He thought they were okay, I thought they were slightly above average. Overall, I wasn't impressed... took me probably 30 minutes of prep, and the end result just didn't do it for me.

Kathy's Roast and Vegetables

I used a 2.5 pound pork sirloin roast, baby carrots, and cut-up russet potatoes, but otherwise followed the directions. Browning the roast didn't help the shrinkage, but maybe that's a beef-only tip? The gravy/sauce was delicious, and the carrots were good. The pork was a bit dry after all that (and I turned it off of low to "keep warm" after 6.5 hours because it was just boiling away), and the potatoes were kind of a mess.

Angel's Chunky Chicken Salad

so I doubled everything and found that I needed about 9T of mayo, rather than the 6 that doubling would have called for. I also added more garlic powder (twice what doubling would have called for). It needed something extra so I added 3/4 diced green pepper. Might try a yellow or red pepper next time, but overall, good.

Chicken with Asparagus and Roasted Red Peppers

I omitted the tomatoes (hubby's not a fan) and used a pepper trio rather than all red, but otherwise tried to follow it exactly. Both of us chose to add more balsamic vinegar than was called for. I served it over fettuccine, though perhaps a smaller noodle would have been better. The amount of time this took didn't measure up with the average dish.

Balsamic Chicken

Garlic Alfredo Tilapia

halved the recipe, but otherwise followed exactly (maybe a little heavy on the cajun, I didn't measure that part). My husband said it was the best meal I've made in months (served with white rice, crescent rolls, and onion green beans). I also found it delicious and look forward to making it again.

Stuffed and Wrapped Chicken Breast

I halved the recipe but used 5 slices of bacon. Instead of fresh red peppers I used jarred roasted red pepper flakes, and instead of green onions I used onion powder. Also, instead of rolling the chicken I just spread the mixture on one breast, stacked the other on top, then wrapped the bacon over it and tucked the ends under, securing with toothpicks. Done in 35 minutes, then just cut it all in half to serve. My husband and I both LOVED it - certainly worth making monthly here!

Garlic Cheddar Chicken

I halved the recipe, but still had enough of the breadcrumb mixture to do 6 breasts, not 4. I didn't pound them thin and they were done in 40 minutes. The overall flavor was a little bland, though my husband liked it. If I make it again I would follow another reviewer's suggestion and add the cheddar shortly before the end.

Garlic Cheese Chicken Rollups

this was really good. I couldn't find a good price on the garlic cheese spread so I used whipped garlic cream cheese. I used 3 breasts, halved the bread crumbs and the parm cheese, and probably only 3 oz of "spread." It was a little difficult to roll the chicken, but overall it wasn't hard and turned out great. I'd make it again.

Cherry Chocolate Cake

I went the shortcut way, with the box mix of Chocolate Fudge cake. I also added a shot of cherry rum as suggest by someone else. It was a good chocolate cake with cherries... it just wasn't phenomenal. I used the chocolate ganache recipe on this website to top it, and that worked out great.

Chocolate Ganache

I used 9 oz (1 cup and a half) of semisweet chocolate chips, and instead of dark rum I used Torched Cherry Rum, since the ganache was going on the Cherry Chocolate cake (on this site). Very easy and very good. Made plenty to cover the cake and then some to dip fruit in! Will try whipping it into frosting next time!

Sweet Dinner Rolls

I'm giving these a 5 because they would have been better if I hadn't messed them up. It was Easter, so I was in the kitchen all day, cooking up a storm. When I pulled the dough out of the bread machine, I had intended to follow another user's suggestion and do cloverleaf rolls - 3 balls in each of 12 muffin cups. But, I wasn't thinking. I made 36 balls, and promptly put them in a bowl to rise for an hour. They rose into one another and formed a giant ball of dough once again. So, I made 36 news balls, plopped them into muffin cups, and baked, about 13 minutes. The balls melded into one another and I had regular rolls.

Chicken Puffs

I used a pound of chicken tenders, chunking them before cooking (in a little olive oil and the garlic. couldn't find the onion so used onion powder). I used whipped chive cream cheese, no butter, and 3 tbsp green onion in the mix. I only needed 2 cans of dough (8 rectangles), but at 350 they took 20 minutes. My husband and I both loved them and I look forward to having the leftovers!

Tiramisu Layer Cake

I used 3 tsp instant espresso powder mixed with a tsp of water to put into the cake - and I put it into two of the layers. I used a whole cup of coffee. I used 4 tbsp Kahlua every time it called for coffee liquer. Nobody could taste the kahlua even then. It took me 11-12 minutes to whip the heavy whipping cream into whipped cream, and I did use another reviewer's suggestion of adding 2 tsp of vanilla pudding instant mix. I lined the bottom of the pans with wax paper so the cakes would come out okay, and I used the suggestion to put the cake in-pan on a rack for 15 minutes, then poke holes and pour coffee, then freeze for 20 minutes. I dusted each layer's filling with cocoa powder as another suggested as well. After assembling I needed to refrigerate about an hour before I could frost - it was starting to slip but was fine after that. I tried making curls by softening the chocolate and hardening the chocolate until it was the right consistency but still only got curves instead of curls. Everyone liked it, but I thought it was kinda average. Personally, I'd rather modify the Amaretto Divine cake to be tiramisu flavor than go through this one again... so much more work.

Amish Bread

I have no idea what went wrong with mine. Followed the directions exactly. After the first kneading it looked pretty soupy, but after the second kneading the consistency was fine. The end product was short and thick, despite using new yeast. Will try again another day.

Shirred Eggs

I'm putting this for a 5 as to not negatively affect the overall rating, but I don't think it was a 5. But, I had to substitute a lot of it - including sour cream for heavy cream, mozzarella for parmesan, and onion powder for fresh chives. I also had to bake for close to 20 minutes. This worked out, and my husband liked it a lot. I, however, thought it was strange. But, I don't like runny yolks, so that could be the answer. The mozzarella and sour cream were fine subs - the onion powder I'd skip in favor of fresh chives next time.
