Baked Apple-Pecan Maple Pancakes
A delicious fall breakfast for my family! A 9" pie plate wasn't enough to feed 5 hungry tummys in my house, so I doubled the recipe and baked it in a 13"x9" greased baking dish. I placed the sliced peeled apples (3) on the bottom of the baking dish, and then brushed them with melted butter. Then instead of using maple syrup, I generously sprinkled brown sugar and cinnamon on them. Last I added the pancake mixture on top of that. So easy! I have even made this recipe the night before and just reheated it for a nice quick breakfast in the morning. I will be making this recipe for years to come!

Crunchy Turkey Salad
This was a great way to use up our leftover turkey and make a super fast dinner. I also used 1/8 cup seaseme oil and 1/8 cup vegetable oil and it did give it an oriental twist on the flavor which I enjoyed. I didn't have any celery, but I added peas and thinly sliced carrots. I will be making the recipe again, and I would even serve it to company.

Vegan Pumpkin Nog
I was very excited to try out this nog recipe since we love the pumpkin flavored nog by Silk and have a hard time finding it. Maybe my expectations were too high, but my 3 daughters and I thought this was terrible. I followed the recipe exactly, and it was bitter, way too thick to drink, and bland. If you like eating plain pumkin out of the can, this recipe is for you. But, if you prefere desserts with flavorful rich autumn tastes, then you will be dissapointed. I even tried thinning the drink with more milk and adding sugar, and it still made me want to gag. Oh, well, I love pumpkin, so it was worth a try.
