Rory's Most Wonderful Corn Bread
I love this. It is so simple and easy to make and can really spice up an already tasty side dish.

Spinach Enchiladas
A good dish, perhaps a little bland. Next time I think I'll throw in some roasted chili peppers and maybe some pepper-jack cheese. Pretty good though.

Pumpkin Roll II
This is one of the best things I've ever cooked. I made it for a company bake off and took 1st prize. The only thing I've changed is that I double the filling (which makes a big difference).
