Breakfast Casserole III

Great breakfast casserole. I put everything together except the eggs on Christmas Eve and then just added the eggs in the morning and bake, covered. I left it in while we unwrapped presents, it took about 45-50 minutes probably because it was cold going in.

Homemade Pork Sausage

I used ground turkey it was good but not great. I would like a little more flavor but it could have been because the turkey has less flavor than pork.

Absolute Best Potato Casserole

This was just ok. I used leftover spiral honey ham and thought it might be better if it didn't have the sweet flavor. I liked the sauce but if I try this again I think i will mix everything together instead of layering it. I didn't use cauliflower.

Chicken Noodle Soup II

My first time making home made noodles. This was great and easy to make but did take a little time. I mixed the noodle dough in my stand mixer and I'm glad I had it. Was thinking it would be nice to have one of those handy pasta attachments for my mixer but I thought it was a great extra arm workout today :) I used leftover turkey and added just a little thyme. I didn't simmer for 2 hours as it was getting late for dinner. Thanks for a great recipe.

Taco Pie

Great! and super easy! I cooked a little onion and 2 small hot peppers with the meat and added a can of kidney beans to the meat. I used the crumbs left in the bottom of a bag of tortilla chips (about 1 cup crushed) and thought it was plenty of chips. I put them on top of the cheese like the recipe says and liked it that way because they were crispy. Olives and tomatoes go great as a topping. Thanks for a great recipe.

No Bake Cookies VII

I didn't actually taste these but had my 9 yr old boy scout group make these and they loved them and wanted the recipe to take home so they could make them again. I had them dust their hands good with powdered sugar before rolling them, the ones that did didn't have any trouble with them sticking to their hands.

Quick and Easy Pizza Crust

Super fast and easy but my favorite part is that it didn't go soggy in the center like so many homemade pizza crusts. I doubled it and made one pizza and 4 large calzones. Yummy!

Eggplant Bake

Delicious! I added some roasted garlic (3 cloves, finely chopped) and chopped the onion and sauteed it before layering it. I also substituted a mixture of monterey jack and mozzarella I had in the freezer for the Feta cheese and sprinkled some fresh basil on top before baking.

Fresh Peach Pie I

This tastes great. I love fresh peaches! I increased the cornstarch by 1 T and I decreased the water but it still didn't set up great. Looked great until I cut it but still tasted great! Just realized I forgot the nutmeg, have to try again :)

Hot Italian Sausage

I needed some sausage but didn't want to go to the store. I scaled to use 1 pound of meat and substituted ground turkey and ground cayenne instead of red pepper flakes. Tastes great and easy! Thanks for a great recipe.

The Perfect Hot Artichoke and Spinach Dip

I needed something to take to a party and had crackers but no cream cheese. This was it! It was very good and made a lot which my family and I gobbled up. I still like the version with the cream cheese better but I guess this one is a little better for your health :)

Very good sausage, easy and good flavor. I added a little ground cayenne and by mistake added too much brown sugar. I'm sure I will like it better with the right amount of brown sugar. Thanks for a good recipe

Buttermilk Biscuits I

I used to bake biscuits for a fast food restaurant and I have some tips for those of you that have never made biscuits or that are struggling to get them right. 1. Never over-work your dough. Mix it only as much as you absolutely have to or it will be tough. 2. Don't add too much flour! flour can be affected greatly by the humidity in the air so what works today may not work tomorrow. Biscuit dough should NOT be easy to work with, it will be pretty sticky. If you add enough flour so that it is easy to work with your biscuits will be dry. 3. Your shortening should be left in small chunks (about the size of a pea) so that your biscuits will be flaky. You can substitute a little butter for part of the shortening to give a richer flavor but your biscuits won't raise as well. 4. Roll your biscuits to at least 1/2 in thickness (or more) to have nice high biscuits. When you cut them push straight down and straight back up. Twisting the cutter will cause your biscuits to raise unevenly. This is a good biscuit recipe, flaky and delicious but I'm still looking for the perfect flavor.

Classic Waffles

These are delicious and super easy! light and crisp just the way I like them. The only change I made was to separate the eggs and whip the egg whites then fold them in very last. Thanks for a great recipe!

Good Old Fashioned Pancakes

great and SUPER easy! I might try adding vanilla next time, but they are good as written. I will, like another reviewer make the dry part in bags with instructions to take camping instead of buying another bag of mix.

Winter Squash Rolls

These were so good! My husband and his brother (who would not eat squash if they were starving) devoured these rolls. They each ate several the night I made them and got up and had them for breakfast too. When they were gone DH asked when I was going to make more. Of course I didn't tell him about the squash and my daughter said I shouldn't tell him ;) I steamed the squash in the steamer and left the dough pretty soft. great! thanks

World's Best Lasagna

This was terrific! I have made lasagna several times using just dry noodles but this time I soaked them in warm water and I like this way much better. I was a little worried about the fennel seed but decided to use it anyway and try it and it was good. I didn't have fresh parsley so I used dry, about 1 1/2 t. The only other changes I made were using 1 qt of my home-canned diced tomatoes instead of the crushed and some frozen tomato puree instead of the paste. Since the total amount of tomatoes had been increased I did heaping spoons when measuring the basil and italian seasoning. Thanks for the great recipe.

Wonderful Waffles

Great waffles, i gave them a 4 because I like more of a crispy waffle and these were crisp right when you took them out of the waffle iron but quickly went soft. The flavor was great! The only change I made was adding about 1/4 cup more buttermilk since the batter at that point was pretty stiff.

New England Potato Soup

This was a big hit! Though a little sweet for my taste, next time I will reduce the sugar or maybe omit it. I put it all in the crockpot after adding the milk/flour mixture to the soup as I was waiting for company. I had to add a little more flour mixture to thicken it up a bit more and decided to add about a cup of shredded cheddar cheese to it. Good use of leftover ham.
