Slow Cooked Corned Beef for Sandwiches
Outstanding recipe!..but, there are only two of us, both Rueben Sandwich connisoures. The smallest brisket at our market was 4 pounds, which seemed way too big for us, so we bought a half pound of sliced deli corned beef. I followed the recipe, boiled it,and simmered it in Guiness, half a bay leaf, two cloves of garlic for 3 hours...it was fall-apart tender. Made Ruebens with bag kraut and pumpernickle bread, 1000 Island dressing and Swiss cheese...it was every bit as good, or better, than any resturant or deli Rueben we have tried!...Great recipie...by all means a winner...even if you don't have the brisket..sliced deli meat works just fine!!
