Ranch Dressing II

This is blander than regular Ranch dressing, and too thick. I added 1/4 cup milk, 1 t worcestershire sauce, seasoned rice vinegar to taste (about 2 Tbl) and some extra chives, garlic powder and salt.

Oven-Baked Chicken

This recipe is just OK. I used chicken breasts, so I had to watch them carefully since it gets drier than chicken on the bone. I really prefer coating my baked chicken with crushed cornflakes. I didn't have any, and thought I'd give this a try. I'll go back to the crushed cornflakes.

Spiced Mixed Nuts

Very easy and tasty recipe! Love that it's prepared in the microwave. I agree with the other reviewer that the coating is enough for 2 1/4 to 2 1/2 cups of nuts. It only took 4 minutes in my microwave - you'll see the coating start to bubble and thicken slightly. then it's time to spread them on the cookie sheet. Served them to my hubby's friends who came over to watch football - big hit!

Sweet Potato Casserole I

This is a GREAT recipe! I used 1/2 cup brown sugar in the potatoes instead of the white sugar, and I left out the coconut (my family doesn't like it) and it was awesome. In my opinion, the orange zest makes it 'different' and not the same-old sweet potato casserole. Next time I will use less sugar in the topping - it is a bit too sweet.

Fantastic Black Bean Chili

I'm giving this 4 stars because it really does require MORE SPICE/HEAT! I made it as written, and my kids loved it, but anyone over 12 will want more heat. I just added more chili powder and some salsa after serving my kiddos.

Artichoke & Spinach Dip Restaurant Style

This is very good - I had always made the mayonaise/parmesan version of spinach/artichoke dip, but I think this one is better. Much more like what you get at a restaurant!
