Mediterranean Lentil Salad

Reviewed: Aug. 18, 2010
This turned out so delicious. I made a few modifications based on what I had on hand. I didn't have any lemon so I used balsamic vinegar instead. I used about 1/8-1/4 cup. It worked out beautifully. I put the lentil salad on top of spinach and romaine with cucumbers and red bell peppers. It tastes great together.

Spicy Sweet Nuts

Reviewed: Jun. 28, 2010
I think the salt HAS to be a typo. Based on the other review, I used 3 tsp of salt and it was still too much. If I were to make this again, I'd use 1 or 2. Also the maple syrup never really absorbed. Even after putting the nuts back for another 10 minutes. I think a sugar-based recipe would work better. I felt like there could be just a touch more cayenne and more sweetness. The spices are right, the recipe just needs some tinkering.

Best Chocolate Chip Cookies

This made perfect cookies! I added chopped dried cherries and these were gobbled up. The dissolved baking soda in water is the secret.

Easy Curried Cauliflower

It was ok. I followed the recipe almost exactly and it turned out just ok. I'm not sure if I've just eaten a lot of Indian food and grown picky, but I felt like there was something really lacking.

Cheesy Quinoa Pilaf with Spinach

Delicious! I used Parmesan since that's what I had on hand. I didn't have sunflower seeds either. It turned out great. I will make this again!

Yum yum and YUM! I didn't have the green onion and only had fresh tofu, but this tastes GREAT. I gently sauteed the tofu beforehand.

Brownies III

These are great brownies. They are chewy inside and crunchy outside. I used slightly less oil and half the salt and they turned out fine. I actually kind of enjoyed the saltiness as it complimented the sweetness of the ice cream. Yum!

Good Old Fashioned Pancakes

I love this recipe. I ended up adding quite a bit of milk to make thin enough pancakes for my liking. I also added 1 tsp of vanilla as someone else suggested. YUM!

Oatmeal Chocolate Chip Cookies I

Yummy! I followed the recipe almost exactly except I used 1/2 shortening and 1/2 butter. I also added 1 tsp of vanilla and 1/4 tsp cinnamon. I threw in some almonds because I happened to have some. Great recipe!

Japanese-Style Cabbage Salad

Reviewed: Mar. 16, 2008
This is really great. I think this would be fantastic followed as is, but I made the following modifications for my own personal taste. I added about 1/4 cup of shredded carrots, I used roasted salted peanuts instead of almonds, and about half a bunch of green onion (a whole bunch seemed like too much).

The Best Banana Bread

Reviewed: Mar. 15, 2008
The flavor was really great. I used two small/medium bananas, next time I will opt for 3. I also did like others and used 1/2 cup of white sugar and 1/2 cup of brown. I also added a teaspoon of vanilla and a teaspoon of cinnamon (next time I would use more cinnamon). My loaf was done in close to 50 minutes and was starting to burn on the top.
