Fruited Curry Chicken Salad
I also really enjoyed this recipe. Perfect for a hot summer night or a nice lunch. I changed a few things, like using craisins in place of raisins and I actually left out the grapes altogether. I also didn't add the curry, but it still had loads of flavor. The recipe doesn't mention it, but I think it's always important to salt and pepper to taste. I served mine on Challah rolls with lettuce and they were great!

Across the Border Tequila Shrimp
This was fabulous. Really great flavor & not your typical lemon garlic shrimp type dish. We really love it & have added it to the rotation.

Shredded Beef Chimichangas
Very tasty. I found that cooking them with a bit of butter left them a bit dry. So, I put about a 1/4 inch of oil in the bottom of my baking pan, put that in the 450 degree oven to heat up. Then I placed the Chimichangas in the oil to cook. The result was much closer to a restaurant version of crispy deep fried chimis
