I loovveee to bake!!! I like to be in the kitchen inherently but I really enjoy baking. There is something so comforting and lovely about the way a kitchen smells when baked goods are being produced.

My favorite family cooking traditions
Christmas is always my favorite cooking time of the year. Every year I pick about 10 different baked good item recipes, narrow it down to my favs. and then give them as gifts to friends and family.
My cooking triumphs
I have recently venture into cake decorating and just completed my very first cake made with fondant. It came out a little rough but I'm still very proud of my effort. I never before saw a reason to do anything more than slap some icing on a cake (not that I don't still do it) but I now see how fun and creative it can feel to play with decorating. I may have found my new passion...
My cooking tragedies
I once tried to make biscotti, the recipe recommended that the baking sheet be lined with parchment paper. I proceeded to line my baking sheet with what I thought was parchment paper. Not long after placing my sheet in the oven, smoke started to seep out around the oven door seal. Upon opening smoke billowed out filling the kitchen with the nastiest stench ever, the smoke detector started screeching, my two dogs started howling and my neighbor called to make sure she didn't need to notify the volunteer fire department. What I thought was parchment turned out to be wax paper.

Basil Tomato Rolls
These are fantastic! I really like simple tomato basil sauces so anything combining said sauces and bread is right up my alley. The only alterations I made to the recipe were to omit the salt in the sauce and add a tsp of rosemary to the dough. I divided my dough into a 12 tin muffin pan and then just worked the dough around the cup to create a large indention in the middle. I was able to get an ample amount of sauce into each one and was very pleased with the way the rolls baked up. I will def. be making these again maybe with a small bit of pesto or olive tapenade hidden away under the tomato sauce.

Blackened Chicken
I've never had blackened chicken before so I'm not sure how this measures up to "traditional" examples but I liked this recipe. As written its not very spicy so a variety of pallets can handle it, at the same time the ingredients are easy to alter to any taste. For example, I made 2 pieces of chicken one for myself and one for my husband. My husband's piece got the original spice mix, mine got a little extra cayenne added. Supper easy and we both got flavor and heat level we enjoy. Thanks :)

Ricotta Stuffed Squash
I'm sure now why I read several reviews saying that this was good/okay without the tomato sauce but better with. The flavor in this dish is almost totally dependent on the tomato sauce. The idea of this recipe seems delicious but unfortunately it's just not for us.
