I am a proud mommy of an amazing baby boy! While I wear many hats, mommyhood is by far the most humbiling, rewarding, and exiting I have ever known!
My favorite things to cook
I just love to cook and cook healthy!! Health and nutrition have been a hobby, passion, and area of study for me. I believe that what we put into our bodies has a direct effect on our physical, mental, emotional, and even spiritual well-being. Believe me when I say even a home-made chocolate(or carob!)chip cookie will have a noticlably different effect, not just on your waist-line, but your overall well-being then a pre-package, and over processed one! There is something rewarding when you can control what is in your food. Even a splurge food! I love to cook organic and get creative w/ produce from our local farmer's market. Lately the ingredients in homemade baby food has been super fun to play w/!

Blueberry Oat Cookies
These cookies worked out nice. A few pieces of advice. When using berries(frozen or fresh) toss in a bit of flour before adding them, it will minimize the bleeding of the blue color into the whole cookie. Also just gently stir them in w/ a wooden spoon. This will also help from spreading too much color. To answer one reviewer, if you would like to incorporate flax into your cookies ground flax makes an excellent egg substitute. I use it almost exclusively in cookies and muffins. Just add 1 tablespoon ground fax to 3 tablespoons water (this is equal to 1 egg) let sit about 5 min. and vola! perfect egg substitute and healthy cookies! Oh, whole wheat flour works great in these cookies.

Easy Batter Fruit Cobbler
Love it!! Takes minutes to put together...the hardest part is the wait! my son loves this. We've tried many different combination of fruit and using a mix of frozen blueberries and raspberries is our favorite. Oh! last time I used brown sugar instead of white and sprinkled 1 teaspoon vanilla sugar(sugar we have vanilla beans in to flavor).

Sweet and Sour Meatballs II
OMG! Want a super easy diner idea?! Use pre-made frozen meatballs! Defrost/brown in pan, mix and pour on sauce(I also use white vinegar), add frozen peas and thinly slivered carrots if you want, simmer 15-20 min. and serve with rice! Excellent sauce!
