Green Bean Casserole I
This is the classic green bean casserole recipe, in my opinion. I always add slivered almonds. They lend a wonderful texture to the whole thing. And I add a splash of milk or creamer for consistency. You can also make this recipe vegan very easily! Just get a vegan cream of mushroom soup (whole foods has some) and used vegan creamer. We'll still be serving Turkey, but there will be tons of vegetarian food as well :)

Sweet Potato Casserole II
Yum, yum, yum. This recipe is so wonderful. I also love that it is vegetarian. I have such a hard time finding vegetarian recipes that the whole (meat eating) family will like. This year at Thanksgiving, I'm following the advice here: http://www.ehow.com/how_5677469_enjoy-thanksgiving-vegetarian.html to make it a good time for vegetarians and non-vegetarians alike!

Fresh California Salsa
This is the exact recipe I always use (except I never measure and just eyeball it). Best salsa ever, hands down. Sometimes I add a splash of red wine vinegar...sometimes not. Every time I bring this to a party it gets gobbled up right away. People request that I bring it. Also, mix a few spoonfuls in with mashed avocado and you have the most amazing guacamole on the planet.
