Satiny Chocolate Glaze

Simple and yummy. Tips: When cooking with chocolate, the quality of the chocolate will hugely impact the quality of the finished product. In other words, USE GOOD CHOCOLATE! I used giradelli chips, but you could also use your favorite kind of baking chocolate in squares or chips. But a warning, there is no point using good chocolate if you're then going to use a microwave. Microwaving breaks down chocolate and hurts the chemical composition. If you don't have a double boiler, use low heat on the stove. It will still take only a few minutes to make this and the result will be far better.

Whole Wheat, Oatmeal, and Banana Pancakes

Went exactly by the recipes (well, I had 2 overripe bananas so I threw them both in). Very good. I've tried a lot of wheat or oat pancake recipes and they are usually a miserable failure, so I was pleasantly surprised by these. The only trouble -- the kids (1 and 3) weren't into them. My 3-year-old was in tears. The 1-year-old just didn't eat as much as usual. So I don't know if I'll make them again or not, but this is definitely the best so far.

Veronica's Apple Pancakes

As written, inedible. Pancakes need some amount of salt....1/2 tsp for the batch is plenty but without it we had to throw it away. Aside from that, this was decent, but not as apply as I expected. Next time I may replace some butter with applesauce just for the additional apple flavor.

Tomato Bread I

Very good bread; nice change of pace. For those who don't often bake bread, I recommend that instead of using the vague "warm to the touch" method of determining when the tomato juice and water are hot enough, get out a thermometer and let it get to 110 degrees (or whatever your package of yeast recommends). Getting the temperature right is the key to a good rise. I didn't use a "warmed bowl" and don't see why that would matter if you get the liquid the right temperature. I might use a bit more salt next time -- I often use 2-3 teaspoons for two loves of bread.

Delicious Chicken Casserole

I didn't care much for this. I'm wondering if the one cup of cooked rice meant one cup of raw rice because this needed at least 3 cups of cooked rice. I used 2, per other reviews, and it still wasn't enough. It also needed vegetables. The cracker topping didn't work for me.

Hearty Vegetable Soup

Made this as is and it was great. I'm sure you could make changes here and there for variety or to taste but it's vegetable soup. It's forgiving like that.

This is good but not outstanding and for the complexity and the cost of the meal I was expecting more. The sauce smelled wonderful and tasted good but to be honest, I liked it better on the mashed potatoes than on the meat!

Morning Glory Muffins I

Wonderful muffins. My picky 3-year-old asked for third helpings of this. I did make a couple small changes because I know what I like...I'm not fond of wheat germ so I left that off with no problems (just sprinkled walnuts on top) and I used all all-purpose flour because I'm not usually fond of wheat flour in my sweet breads. (This one probably would have worked better than most, but I'll stick with my personal taste.)

Brown Sugar Oatmeal Pancakes

I'm not usually into whole wheat pancakes. I only made them because I was nearly out of all purpose flour. So basically, even with a bias against this sort of pancake, I liked these. They were sweet enough, moist enough, and the texture was good -- not rough or grainy like many whole wheat recipes I've tried. I will probably even make them again after I've restocked my regular flour...sometimes. :=)

Light Wheat Rolls

The best dinner roll I've made! I meant to half the recipe since I only have 12 muffin tins but forgot so I put half in the muffin tins and half on a cookie sheet. The ones in the tins had a better texture but if you're in a pinch the ones on the cookie sheet were fine. Thanks to the reviewer who suggested microwaving 20 seconds with a mug of water! The leftovers were very good that way.

Thanksgiving Asparagus Casserole

I did modify this slightly by using fresh asparagus (I can't stand this particular veggie from a can) and it was all right. The cheese sauce came out a little thicker than I would have liked although the flavor was good.

Mad's Peach-Curry Soup

Excellent recipe! It's a little different (from what I normally eat). I asked my husband to surprise me and he made this. It's sweet and creamy. It's easy to make (though not quick as it simmers for a while) and relatively inexpensive. The only change we made was to skip the lettuce because we didn't have any. I didn't miss it. Next time I may serve this over rice.

Original Nestle® Toll House Chocolate Chip Cookies

Classic and yummy BUT I have recently discovered that the real secret to the best (5 star) chocolate chip cookies is to use high quality chocolate. I've actually started coarsely chunking semi-sweet baker's chocolate in lieu of chocolate chips. I like the large chunks that melt in your mouth and the little shavings that give the cookie itself a more chocolatey flavor. There are a variety of options you can use, but basically a higher quality chocolate will taste better and melt better than cheap chocolate chips.
