Broiled Tilapia Parmesan

Ground Beef Mexican Style

This was excellent. My kids loved it and some are pretty picky eaters. I omitted the tomato since I didn't have any. We like sour cream so I used about 3/4 to 1 cup sour cream instead. Cheese is a favorite of ours too so of course I added a little bit more. I used medium salsa. It was scrumdiddlyumptious. We loved it.

Saucy Pork Chops

This was an excellent recipe. I did cut down on the maple syrup to 1/3 cup though. I actually made this over a period of 2 days. I cooked the pork chops one day and the next day (a very busy one) tossed together the sauce and baked it. So yummy definitely a repeat recipe in my house.

Twice Baked Potatoes

Oh man this was yummy! Even my 5 year old who does NOT like mushrooms gobbled it up. She even asked for seconds. I at more than one myself! YUM!

Tater Tot Casserole

This was good but I like spice it was too bland for my taste. The kids loved it. I think next time I might cook my tater tots a bit before putting them on top, mine ended up soggy.

This was great. I didn't cook it exactly like the recipe says I used 2 cups apricot preserves instead of the nectar and dried apricots. It turned out wonderful.

Grilled Bacon Jalapeno Wraps

These are so yummy. But warning be careful when you go to eat them that they've cooled off enough, the cheese filling will be hotter than you think. I burned the roof of my mouth. OUCH!

Italian Sausage Fried Rice

This was not my favorite. I made it like the recipe said and learned I do not like Italian sausage. While the flavor was good, I think it would have been better with a different kind of sausage. Next time I'll try this with a different kind of sausage, maybe smoked sausage of some sort.

Burrito Pie

What a great recipe. I omitted the olives as my family doesn't care for them. I also split it into two 8x8 pans and made one with cheese and one without for a friend who is allergic. It was good even without the cheese. Sooo yummy! We just ate leftovers of it and they tasted wonderful too.

Monterey Chicken with Potatoes

I served this to my hubby and a girlfriend of mine and they absolutely loved it. I left out the cilantro because I really don't care for it. They thought the recipe was a keeper and I'm preparing it again tonight.
