This is a great recipe! I left out the spinach since I didn't have any but it was still delicious and healthy. And instead of heating the bell peppers up before stuffing them, I just stuffed them and baked them for 30 minutes to allow the flavors of the mixture to be cooked into the pepper more. So good.
