About this Cook
I'm a wife, a mother, a sister, a daughter, a friend, an employee, a believer, a cook, a cleaner, a photographer, a traveler...
My favorite things to cook
Mexican food: enchiladas, tacos, fajitas, etc. Now that I don't have ready-made salsa I make my own and love it!
My favorite family cooking traditions
Sunday dinners at Grandma's. Slow-cooked pot roast with mashed potatoes, gravy, peas & carrots, and those perfectly plump Pillsbury rolls.
My cooking triumphs
My chocolate cake, chocolate chip cookies, and a Thai dish I tried from this site!
My cooking tragedies
Too many to list! I'm easily distracted in the kitchen and have left out a cup of flour in bread, chocolate chips in chocolate chip cookies, measured a tablespoon instead of a teaspoon. I once tried to make Tres Leches with only a list of ingredients - no measurements. HA! You name it, I've tried it. I'm also famous for substitutions.

Thai Chicken Curry in Coconut Milk
I thought it was very dry and flavorless - I like the Thai Noodle recipe and the Thai with pineapples way better! If you are going to make it, make sure to add more curry, korriander, salt, pepper - and even some veggies (carrots, broc, etc.)

Vegetarian Korma
As a new veggie, I tried this recipe out since it had a lot of stars. It didn't disappoint! Even my non-veg hubby loved it and my veggie friend. I used coconut milk instead of heavy whipping cream, which made it a bit more Thai. I also added broc and some other vegetables. YUM! Will do again for sure.

Chicken with Couscous
I thought it was great and will definitely make it again soon. I didn't have a few of the things so I had to substitute green onions for a yellow one, jalepeno peppers for little red chilis, and corriander seeds for fresh cilantro - still came out tasty with a good amount of spice. We don't often have couscous and so it was a nice change, and my 1.5 year old loved it (not the vegetables as much but that's just the stage she's at).
