About this Cook
I am a cooking instructor, writer, and recipe developer. I love to cook and bake, but more than anything I love to teach. I think everyone should know how to cook something, even if it is just a few dishes. My goal is to teach cooking lessons to anyone who has a desire to learn. One of the best social mediums is food; it is the glue that binds all humans together. No matter where you are on the planet, there is something about seeing people sitting outside a little cafe having lunch that warms the heart. My favorite things to cook
I love to bake, roast, and prepare all traditional southern favorite and anything Creole. I am a master bread baker and have been known to make the best cheesecake in the world.
My favorite family cooking traditions
Preparing good old fashioned soul food with light fare. I love traditional southern foods...you know fried chicken, roast chicken, roast turkey, roast beef, Boston pork butt, barbecued neck bones, honey glazed ham, fried catfish, roast duck, possum with sweet potatoes, chittlins and hog maws, chicken and dumplins, hush puppies, mashed potatoes with gravy, crowded peas and okra, fried okra, potato salad, candied yams, collard greens, mustard greens, turnip greens with turnips, chow chow, pickled okra, hog head cheese, cole slaw, macaroni salad, macaroni and cheese, spaghetti with meatballs, spaghetti with without meatballs, tiny sweet peas, fried corn, a great big ice-berg salad with two types of dressing, Italian and French served with huge garden tomatoes. Oh, and let’s not forget that homemade Monkey Bread oozing butter down the sides.
My cooking triumphs
During the late 1980's I prepared Turducken the old fashioned way per Chef Paul Prudhomme's recipe. I have learned to be a frugal cook and can make an absolutely delicious pie out of rice...I call it "Sophisticated Rice Puddin Pie." I recently started a blog and I enjoy writing and sharing my knowledge. http://cookingwithdenay.blogspot.com/ In my spare time I teach cooking classes for the local public school lifelong learning program.
My cooking tragedies
I once forgot to put salt in the bread recipe. The dough rose and did not taste half bad, my family never new it!
