Red Enchilada Sauce
Not only is this recipe quick and easy, it tastes great! I used an 8 oz can of tomato sauce, but only 1 cup of water. I also did not bother to measure the spices. I just put what looked 'right' for each one. I can tell you even without having measured that I used a lot more chili powder and cumin than what was called for. And due to time constraints, I only simmered it about 20 mins, then added it to my own enchilada recipe. I can see where it would taste even better if you had time to simmer it longer. Even so, I won't be buying canned enchilada sauce anymore!
