Lemon Zucchini Bread
Instead of 1/2 cup of oil, I used 1/4 cup oil and 1/4 cup apple sauce. As others recommended, I added 1 tbsp of lemon juice, 1/2 teaspoon of vanilla and 1/4 cup chopped walnuts. Also, I modified the sugar to 1/4 cup brown sugar and 1/2 cup white sugar. This zucchini bread came out moist and delicious with a nice hint of lemon!

Moussaka
I used ground turkey instead of beef, browned it using spray oil and added 2 garden fresh tomatoes and a dash of sugar to the meat sauce. I also grilled the eggplant to make this dish a bit healthier. The finished product was delicious!

Shrimp Fried Rice II
This was excellent! I used brown rice and added peas and it was just as good as from a restaurant. This one's definitely a keeper!
