Chicken Piccata

This was a gourmet meal without the long cooking time! I used a mix of butter and olive oil in a pan, I also coated my chicken in egg and then dipped it in the flour. Mixed 1/4 cup wine and 1/4 cup chicken broth, plus 2 tbsp fresh lemon. Delicious!

Easy Cream Cheese Danish

So delicious!Definitely only use 1/2 of the filling, all of it would have been way too much. Followed the first reviewer's comments and it came out great! I also added almond extract to the glaze topping. Next time I will add raspberry preserves to the filling too!

This recipe is great just as it is! I almost always turn my oven down about 10 degrees so the cookies don't burn.

White Chocolate Covered Pretzels

Reviewed: Dec. 25, 2008
This recipe is so easy! I did change it a bit though. I melted milk chocolate chips in the microwave with about a tsp of shortening. This really helps the consistency. I used pretzel rods, and dipped about 3/4 of them into the chocolate. I used my food processor to crush oreos and rolled some of them. The food processor works great because the there were no large pieces of cookies left, which made the rolling really easy. They looked great for a holiday party!

Creamy Rice Pudding

Reviewed: Dec. 17, 2008
This was really good! I used skim milk, which meant it had to cook a little longer. I also only used 1 1/2 cups, I didn't need to add the extra 1/2 cup at the end, it would have made it too watery. I mixed in some cinnamon instead of raisins and it was delicious!

Banana Blast II

Reviewed: Sep. 27, 2008
This was really good with a few changes. Used 1 banana, eliminated the water and ice cubes (my banana was frozen), added 1 teaspoon vanilla and a touch of cinnamon and nutmeg in addition to the brown sugar and milk. Tasted like a milkshake minus the ice cream!

Apple Squares

Reviewed: May 5, 2008
These were great! Made a few changes- I doubled the recipe and used a 9x13 pan. Used 2 medium sized Granny Smith apples. I made a struesel topping (flour, cinnamon, sugar, and cut in the butter) instead of the cinnamon/sugar mix. baked for 32 minutes, came out perfect! Tasted like an apple coffee cake. This will be a regular recipe for me!

Slow Cooker Barbecue Ribs

Reviewed: Apr. 29, 2008
This recipe is great with some minor tweaking. Like others, I substituted 2 cups Jack Daniels barbecue sauce for the ketchup and 1 cup ketchup in place of the chili sauce. Seasoned the ribs first with onion powder, garlic salt and black pepper based on another reviewer's advice. Excellent flavor!
