Banana Bread I

Spring Lime Tea Cookies

These were very fluffy!!! I liked them. The great thing about these is you can make all kinds of flavors with this recipe (i.e. orange, lime, tangerine). I will make this again...so many recipes so little time!!

Jam Filled Butter Cookies

This were very popular when I made them for a bbq!! I used guava paste fore the center. The only thing I will change is maybe adding some vanilla extract!! yummie!!

Sicilian Lentil Pasta Sauce

Wonderful!! I served this over spagetti!! MMMMMM... this is very filling and a great alternative to meat. The changes I made were: yellow bell pepper (needed to be eaten), 1/3 of a chicken bouillon cube, two pinches of dry basil, and scaled it down to 2 people. Wow, so good I think I might go back to my vegetarian ways!! :)

Buttermilk Pound Cake II

I wish you could give 1/2 *´s. Anyhoo, I thought this cake was great but I will change somethings next time such as: adding more lemon (could not taste it really), slightly less sugar, and reduce the amount of eggs!! I felt a real eggy taste!! Oh, and I halved the recipe and put it in a 9x13" pan cuz that was all I had. I cooked it for an hr. but I think I should have followed the other reviews of 70 mins. I will definitly make this again, maybe next time with lime or an orange!! :P

Blackberry Cobbler II

This recipe was okay, but didn´t turn out as I would have expected. The topping was delicious but not crumbly, and as others mentioned there is not enough topping for the whole dish. The berry part was good, but REALLY sweet. I won´t make this again... :(

Banana Pancakes with Berries

This was the best!!! The only thing I DIDN´T do was add whipped cream since I am trying to cut back on calories. The strawberries were great, and so were the pancakes. The only personal change I would make would be to add only a tsp. of vanilla extract in the berry mix, and a sugar substitute. Just trying to watch the cals!!! :) but it is great as is!

Braised Balsamic Chicken

This was EXACTLY my taste!! The only thing I did not add was thyme since I didn´t have any. My bf loved it too!! I served it with seasoned penne pasta, yet there was way more then enough sauce for the pasta as well!! Next time I will use the sauce to go on the pasta...less work for me!! :P

Honey Mustard Grilled Chicken

This was great!! I don´t even like mustard but I thought I would give this a shot and it was so good!! I did however, bake it in the oven for 35 min. at 220 degrees C. I bet it would taste even better on the grill!! My bf liked it too, and said it was a great combo of flavors!! thx!

Mushroom Rice

This rice was good, but I think it would have been even BETTER if I had some of the ingredients (i.e. parsley and green onion). I also used a chicken bullion instead of broth since it´s not available here. I am sure it would have been 5 stars if I used what the recipe called for. My bf just complained and said I should give it 5 **´´s !!! hahaha

Authentic Mexican Tortillas

I didn´t like these at all unfortunatly. To me they had an extreme FLOUR taste. I am a big fan of corn tortillas but do not have access to mexican seasoning or food. I did use butter instead of shortening since is hard to come by in Brazil. It was easy to make though.

Guacamole

This is the best guacamole ever!! I don´t even like guacamole OR avocados!!! I just made this because I wanted my boyfriend from Brazil to know about my culture and Mexican food. He said he didn´t like avocados either but he LOVED this and so did I!! But I can kind of see why he didn´t like them before since his mom just ate them with sugar!! yuck! A must try! Hey, It turned two non-lovers of avocados into now lovers! Thank you!!

Brazilian White Rice

I made this rice so many times for so many people and one guy said it reminded him of the rice his family makes that are from Nicaragua. Another said it was like the rice they make in El Salvador (and Peru)!! The rice is a definite crowd pleaser!! The second time around I added DASH GARLIC& HERB BLEND since I didn´t have any onions and that was really good too! You gotta try this recipe, it is so easy and delicious!!
