Jalapeno Chicken II
This recipe was good overall. I used 2 pieces of bacon instead of 1, the idea stemming from a previous reader. I also baked it instead of grilling, which worked out great: 400F for about 25 minutes, then a low broil (to crisp the bacon on the outside) for about 5 minutes or so. The only change I will make next time I make it (and there will be a next time since it was pretty good) is that I will chop the jalapeno up and mix it with the cream cheese. That way the filling will be more uniform, easier to work with and the jalapeno will be evenly distributed so you get some in every bite. Pretty yummy stuff!
