Reuben Pizza

Never had a Reuben pizza so didn't know exactly what to expect. I found a whole wheat prepared pizza crust so used that instead of bread dough. We used olive oil with a little garlic powder & onion powder replacing the Thousand Island dressing (don't like) that others suggested. This wasn't so bad, but will try again with a different "sauce". We're going to put dijon mustard w/horseradish in because it needed a "kick" & that is what we put on our Reubens. It is a nice change from sausage & mushroom or chicken pizzas.

Chicken Chimichangas with Sour Cream Sauce

Very good!!! It took longer to cook down, but worth it. I was afraid it would be overload on spice, but not so. The only thing I did different was use half as much sauce as needed for the number of chimichangas I made. I had leftover chili's because of it & next time I'll use the full amount instead of cutting that back also. Will make again, but probably not to often because of the time, but I may make several bathches & freeze.

Sweet, Sticky and Spicy Chicken

Very good. I did others advice & double the sauce since we added the veggies & served over rice as the submitter suggested. Next time I'm going to reduce the hot sauce a tish just out of preference. Would like to try as an appetizer also.

Hot Corn Dip

Was kind of disappointed, but still gave it 4 stars. We used Rotel because that has more umph to it, used the garlic & chili powder also, but it didn't have much kick. Will make again, but try Rotel tomatoes again & double the chili powder.

Sweet Potato Oranges

My gosh, where do I start? My hubby said it was a 4 or 5, but I couldn't agree. I will make again, but with out all the work. I didn't use as much sugar or butter as called for & will cut back more as I thought it was way to sweet. I won't put in the orange shells either, even though it did look nice, it was a big hassle. We did both agree the orange flavor mixed with the sweet potato was nice & so that is what I'll go off of. I'll mash the sweet potatoes, use less butter & sugar, put in ramekins (for cuteness) & put in a larger dish for the water bath. For the topping I'll use less also to keep the over powering sweetness done.

Coconut Shrimp I

Made this several times & finally got to make it with a deep fryer. Using a deep fryer is much better than baking or frying in a pan.

Mexican Pumpkin Empanadas

I didn't care for this at all, but hubby & the neighbors liked it. I may try using the crust with an apple pie filling & see if it is any better. I would've only given this a 1.

Cranberry Apple-Nut Pie

Really disappointed. I made as stated except reduced the sugar because of reviews to 1 1/2c. It was still way to sweet. The sugar seemed as if it didn't dissolve. I mixed very well & even cut up the cranberries. I think I'll suggest warming it in micro & adding some lite vanilla ice cream to see if it reduces the sweetness.

Ancho Honey Mustard Sauce

Quick, easy & tastes great. Used this sauce on chicken nuggets & will use on ham also. Don't need to change a thing. We used to make a honey mustard sauce, but this has just a nice zing.

Chocolate Truffle Cookies

If you like chocolate these are for you. The prep & ball rolling is a 1 star, but the taste is 5. These are worth the trouble, but for something special. Hubby made the dough & I rolled the next day to bake so that helped.

Cioccolata Calda (Hot Chocolate Italian-Style)

This was tough since I thought it was a 2 star & hubby gave it a 4 star. Does take time because of the slow simmer to make & you need to love chocolate. I guess I expected something different that what it turned out to be.

Campbell's® Easy Chicken and Cheese Enchiladas

Pretty good, but did add cumin as other suggested. I will reduce chili powder to 1 tsp though next time as it was so overpowering. Also, watch how long you bake & if using a glass pan so it doesn't dry out.

Turkey and Bacon Panini with Chipotle Mayonnaise

I really liked this, but hubby wasn't as keen so we compromised on the rating. I did use homemade Ciabatta bread though. I want to make again, but need to have hubby agree.

Easy Honey Mustard Mozzarella Chicken

Easy enough, but didn't really taste the bacon. I'll use a lot less honey & mustard. We did use dijon & it wasn't as strong which we prefer. My hubby said to use more bacon, but there wouldn't be any room on top of the chicken so I'm not sure what I'll do next time for more bacon flavor other than a different type of bacon.

Peanut Butter Cup Brownies

Not real impressed, but would make in a 9x9 or 9x13 pan though. It was confusing of suggestions made by others about following brownie box over this recipe. Did they mean just baking time or ingredients added? Also, spraying cupcake liners didn't make a difference - they still stuck. IF we make again it'll be in a pan & with mint cups instead.

Chipotle Smashed Potatoes

We tried as written & can only give 2 stars. We'll try again w/some changes - more butter, milk, less chipotle pepper, maybe more cheese & cilantro. If this works it'll probably be a 3 or 4 star rating. My hubby thought these were very dry & the chipotle flavor overpowered everything else.

Pineapple Pie III

Never had a pineapply pie before so don't know what exactly to look for, but it is different. Very easy to make. I didn't have a double crust available, so instead of a top crust we just topped with some whipping cream when serving. Will probably make again just because it is easy & not your "typical" berry pie.

Glazed Chicken Wings

I won't be making this again b/c it isn't as versatile as I thought. We used chicken breast, but it didn't the glazed top we were looking for. Maybe if I'd cook it as long as it stated it would have, but the chicken would be so dried out you couldn't eat it. If I try again, I won't use but a dash of the soy sauce because it made the chicken very salty for us.
