OK, if you want a FAST and DELICIOUS meal...this is the one. Here's a tip, I buy the rotisserie chicken (already cooked). One night, the kids will eat the legs off the chicken and some breast. The next night, I chop up the leftover chicken breast and make this outstanding recipe. Thank you for this recipe!

Fruit Pizza I

The whole family loved it! I had to cook the crust much longer than it called for, at least 20 minutes (waited for the sides to turn golden brown). I only used strawberries and blackberries. It was great.

Fabulous, kids loved it! Rosemary is the secret increditent. It's the "surprise" flavor in every bite. Love it!

Stuffed Shells I

The best! I had never used cottage cheese before in my stuffed shells and now, I will never use anything but!!! People go crazy over these when I make them. Great dish and very easy!

Pineapple Bread Souffle

This really is a delicious dish and you will definitely please your guests. I have to say, the first time I made it, I followed the directions and while it tasted really good, it looked a little flat. The next time I made it I used 6 eggs, instead of 4 and 7 slices of bread instead of 5. It was perfect. NO leftovers! It was a big hit!

Penne Pasta with Spinach and Bacon

This recipe is outstanding. I think I gained 10 lbs. because I couldn't stop eating it. It has such a great mix of flavor. I have to say, I followed many peoples suggestions by 1)using diced tomatoes with herbs 2) putting the spinach in with the bacon/tomato mixture and 3) I used a little bit of half and half. Before making the recipe, I was afraid (because of some reviews) the flavor would be bland and the recipe would come out soggy. I have to say it burst with flavor and was far from soggy. I was also afraid that the bacon grease would be too much, but it wasn't. This is a KEEPER! What a treat! I’ll be making this for our Mother’s Day party for sure!

Alaska Salmon Bake with Pecan Crunch Coating

This is an outstanding recipe. My young kids (4, 6,and 8yrs old), LOVED this! It was so easy to make! Perfect for a Sunday night dinner when your busy with activities all day. F.Y.I., I had to sub the salmon for talapia because that's all we had, and it was fabulous!
